Sweet Corn Black Bean Salad

This Sweet Corn Black Bean Salad is the perfect side dish to bring to your next BBQ, picnic or get together this summer. It’s fresh, flavorful, and incredibly easy to make.

Ingredients

  • 4 Sweet Corn (about 3 cups cooked kernels)
  • 1-15.5 oz can black beans, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1 green bell pepper, seeds removed, chopped (yellow or red peppers also work beautifully)
  • 1 avocado, seed removed, chopped
  • 4 green onions, green parts chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 Tablespoon fresh lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon red pepper flakes (cayenne pepper optional for extra spice)
  • 2 Tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Begin by husking the ears of corn, removing all silk and leaves.
  2. Fill a large pot three-quarters full with water and add a dash of salt. Bring the water to a rolling boil over medium-high heat. Once boiling, reduce the heat to medium and carefully add the husked ears of corn.
  3. Cook the corn for precisely 4 minutes. Promptly drain the water and remove the ears of corn. To halt the cooking process and preserve their crispness, run the ears of corn under cold water immediately. Set them aside to cool completely.
  4. In a spacious mixing bowl, combine the drained and rinsed black beans, finely chopped red onion, diced green pepper, creamy chopped avocado, and the vibrant chopped green onions.
  5. Once the corn has cooled, use a sharp knife to carefully cut the sweet kernels away from the cobs. Add these fresh corn kernels to the vegetable and bean mixture in the large bowl.
  6. For the dressing, combine the fresh cilantro, fresh lime juice, ground cumin, red pepper flakes (and cayenne if using), and extra virgin olive oil in a small mason jar or a container with a tight lid. Secure the lid and shake vigorously until all ingredients are well combined and emulsified. Taste the dressing and adjust with salt and pepper as desired.
  7. Pour the prepared dressing generously over the corn salad mixture. Toss everything gently to ensure all ingredients are thoroughly coated. Taste again and adjust any seasonings to your preference.
  8. Serve this refreshing salad alongside your favorite grilled dishes, enjoy it as a hearty dip with tortilla chips, or use it as a flavorful topping for hamburgers, hot dogs, or tacos. Enjoy the vibrant taste of summer!

  • Omit the cayenne red pepper if you prefer a milder salad with less spice.
