Ingredients

  • 1/2 cup quinoa, rinsed and cooked
  • 1 cup water
  • 2 Tablespoons olive oil
  • 1 cup onion, chopped
  • 1 pepper, {I used 1/2 a red and 1/2 a green}
  • 3 cloves garlic, minced
  • 1 lb. ground turkey
  • 2 teaspoons lime juice
  • 2 Tablespoons ginger, peeled and grated
  • 3 Tablespoons soy sauce, low sodium if possible
  • 2 teaspoons chili garlic sauce, {I use Huy Fong Chili Garlic Sauce}, more or less for spiciness
  • 1 1/4 cup cilantro, chopped {plus extra for garnish}
  • 3 green onions, green part chopped
  • Salt and pepper to taste
  • 1 head Bibb/Boston Lettuce, washed and separated

Instructions

  • Begin by preparing your vegetables: finely chop the peppers and onion, and set them aside. Peel and grate the fresh ginger, placing it in a small bowl for later use. This initial prep ensures a smooth cooking process.
  • Next, cook the quinoa. Rinse the quinoa thoroughly under cold water using a fine-mesh sieve to remove any bitterness. Then, cook it according to the package directions. Typically, 1/2 cup of quinoa requires 1 cup of water and simmers for 13-15 minutes, or until all the water is absorbed and the quinoa appears light and fluffy.
  • Heat 2 tablespoons of olive oil in a large skillet or pan over medium heat. Once the oil is shimmering, add the chopped onion and sauté for 2-3 minutes until it begins to soften and become translucent. Incorporate the chopped bell peppers and minced garlic, continuing to sauté for another 2 minutes, allowing the aromatics to release their fragrant oils.
  • Add the ground turkey to the pan, breaking it up with a spoon as it cooks. Stir in the fresh lime juice, grated ginger, soy sauce, and chili garlic sauce. Continue cooking until the turkey is fully browned and cooked through, ensuring there are no pink spots remaining. The turkey will absorb all the wonderful Thai flavors.
  • Once the turkey is cooked, stir in the prepared quinoa, ensuring it’s well combined with the turkey mixture. Finally, fold in the fresh chopped cilantro and green onions. Taste the mixture and season with salt and pepper as needed, adjusting to your preference.
