There’s nothing quite like sharing beloved family recipes, especially those that carry the rich heritage and comforting flavors of Lebanese cuisine. This dish is a heartfelt tribute to the Middle Eastern ingredients and aromatic spices I grew up with. Our Slow Cooker Mediterranean Beef Meatballs isn’t just a recipe; it’s a culinary journey, ingeniously twisting traditional Lebanese flavors into a convenient, modern slow cooker meal.
While my Lebanese Grandma might not have had a crockpot for her Lebanese Green Beans (Lubee), we can certainly embrace smart shortcuts to bring these authentic tastes to our busy lives. Especially with school back in session and packed schedules, we need all the help we can get in the kitchen. This recipe draws its unique spice blend from classic Kibbeh, expertly infusing these flavors into tender, homemade beef meatballs.
The harmonious blend of earthy cumin, fragrant allspice, warm cinnamon, and a hint of cayenne red pepper creates an irresistible flavor profile that defines these meatballs. They then slow cook in a vibrant base of Lebanese green beans, a hearty mixture of frozen green beans, sautéed onion, minced garlic, diced tomatoes, and those same enchanting warm spices. The result is a deeply savory and aromatic sauce that perfectly complements the meatballs and is just begging to be spooned over a bed of fluffy rice.
As these Mediterranean meatballs slowly simmer throughout the day, your home will be filled with an incredible aroma that evokes cherished memories and the comfort of family gatherings. Every time I prepare this dish, I’m transported back to my Grandma’s kitchen, a testament to the power of food to connect us with our past. Essential Ingredients You’ll Need

Crafting these delectable Mediterranean Beef Meatballs with Lebanese Green Beans requires a selection of simple yet powerful ingredients. Each component plays a crucial role in building the deep, complex flavors of this dish. Below is an overview; for precise measurements and detailed instructions, please refer to the recipe card at the end of this article.
- Ground Beef: The foundation of our meatballs. We recommend using 80/20 ground beef. The slightly higher fat content is key to ensuring your meatballs remain incredibly juicy, tender, and hold their shape beautifully during the long slow cooking process. Leaner beef can result in dry meatballs.
- Aromatic Spices for Meatballs: This carefully curated blend includes cumin for an earthy depth, allspice for warm, sweet undertones, cinnamon for a hint of sophisticated warmth, and a touch of cayenne pepper to provide a very subtle, warming kick without overpowering the other flavors.
- Breadcrumbs: Essential for texture and binding. Plain breadcrumbs help the meatballs hold together, preventing them from crumbling while also absorbing moisture and keeping them tender.
- Fresh Herbs: Finely minced fresh parsley is a must, adding a bright, fresh counterpoint to the rich spices. You can also experiment with a small amount of fresh mint or dill for additional aromatic notes.
- Lebanese Green Bean Base: This flavorful foundation consists of:
- Frozen Green Beans: Convenient and effective, they cook down beautifully in the slow cooker.
- Diced Tomatoes & Tomato Sauce: These form the rich, tangy, and robust base of the sauce, providing moisture and a classic Mediterranean flavor.
- Onion & Garlic: Aromatic powerhouses that provide the essential savory foundation for the sauce. Diced onion and minced garlic slowly release their flavors as they cook.
- Additional Spices for Sauce: Reinforce the Mediterranean profile with extra cumin, cinnamon, cayenne pepper, and, of course, salt and pepper to taste.
- Olive Oil: Used in the meatball mixture to add moisture and help create a tender texture.
These ingredients, while humble on their own, combine to create a dish that is far greater than the sum of its parts – a true testament to the beauty of Mediterranean cooking.

How to Make These Slow Cooker Mediterranean Beef Meatballs: A Step-by-Step Guide
Preparing this flavorful slow cooker meal is incredibly straightforward, designed for maximum taste with minimal effort. Follow these simple steps to bring a taste of the Mediterranean to your dinner table:
- Prepare the Lebanese Green Bean Base in the Crockpot: Begin by pouring the diced tomatoes and tomato sauce directly into your slow cooker. Add the cumin, cinnamon, cayenne pepper, a dash of salt, and black pepper. Stir these ingredients thoroughly until they are well combined, creating a fragrant sauce base. Next, add the frozen green beans, diced onions, and minced garlic. Give everything another good mix to ensure the vegetables are coated in the spiced tomato sauce.
- Craft the Flavorful Meatballs: In a large mixing bowl, combine the remaining meatball spices: cumin, allspice, cinnamon, cayenne pepper, salt, black pepper, finely minced fresh parsley, and plain breadcrumbs. Drizzle in the olive oil and mix these dry ingredients and oil together with your hands. Now, add the ground beef to the bowl. Using your hands, gently but thoroughly mix everything together. Be careful not to overmix, as this can lead to tough meatballs. Mix just until all ingredients are evenly incorporated.
- Form and Add the Meatballs to the Slow Cooker: Take portions of the beef mixture and roll them into approximately 1-inch meatballs. Once formed, carefully place these meatballs into the slow cooker, nestled among the green beans and sauce. Try to submerge them as much as possible under the tomato sauce so they can absorb all the wonderful flavors as they cook.
- Slow Cook to Perfection: Secure the lid on your slow cooker. Cook the meatballs on the low setting for 8 hours, or if you’re short on time, cook on the high setting for 4 hours. The longer, slower cook time allows the flavors to meld beautifully and the beef to become incredibly tender.
- Garnish and Serve: Once cooked, garnish generously with fresh parsley for a burst of color and freshness. Serve your Slow Cooker Mediterranean Beef Meatballs over a bed of fluffy rice. For an authentic touch, pair with warm pita bread and a side of creamy plain yogurt or labneh.
That’s it! A delicious, wholesome, and aromatic meal ready to impress with very little active cooking time.

Storage & Meal Prep Tips
This recipe is not only delicious fresh but also fantastic for meal prepping and enjoying later. Proper storage ensures you can savor these Mediterranean flavors for days to come:
- Refrigeration: Allow the meatballs and sauce to cool completely before transferring them to an airtight container. They can be safely stored in the refrigerator for up to 4 days. To reheat, you can gently warm them in a skillet over low heat on the stovetop, or in an oven set to a low temperature (around 300°F / 150°C) until heated through. Alternatively, for a quicker option, microwave individual portions.
- Freezing for Longer Storage: These meatballs freeze exceptionally well. Once they have cooled completely, transfer them to a freezer-safe airtight container or heavy-duty freezer bags. For best results and to prevent freezer burn, ensure as much air as possible is removed from the bags. They can be stored in the freezer for up to 3 months. Thaw overnight in the refrigerator before reheating using the methods described above.
- Meal Prep Perfection: Make a double batch to have ready for busy weeknights. Portion out the meatballs and sauce into individual containers with rice for grab-and-go lunches or quick dinners.
Variations & Customizations
While this recipe is perfect as is, it’s also incredibly versatile! Feel free to experiment with these ideas:
- Spice Level: If you enjoy more heat, increase the amount of cayenne pepper in both the meatballs and the sauce, or add a pinch of red pepper flakes.
- Herb Additions: Beyond parsley, consider adding finely chopped fresh mint or dill to the meatball mixture for a different aromatic twist. A squeeze of fresh lemon juice at the end can also brighten the flavors.
- Vegetable Boost: Enhance the nutritional value by adding other slow-cooker friendly vegetables to the sauce, such as diced carrots, bell peppers, or even small potato chunks. Add them with the green beans.
- Cheese: For an indulgent touch, a sprinkle of crumbled feta cheese over the top before serving adds a lovely salty tang.
- Ground Meat Alternatives: While beef is traditional, you could experiment with ground lamb for an even richer, more authentic Mediterranean flavor profile, or ground turkey for a lighter option. Adjust cooking times as needed.
Frequently Asked Questions (FAQs)

If you prefer a slightly crisper exterior, you could quickly brown them in a skillet before adding them to the slow cooker, but it’s an optional step.

- Is this recipe gluten-free? As written, no, due to the plain breadcrumbs. To make it gluten-free, substitute with gluten-free breadcrumbs or an equal amount of almond flour.
