- 1/4 cup feta cheese

Instructions
- In a large bowl, combine the ground beef, minced garlic, oregano, paprika, cumin, garlic powder, onion powder, salt, and pepper. Mix thoroughly with your hands until just combined. Set aside.
- Heat a dry skillet or griddle over medium heat. Place the pita shells on the surface and cook one side for about 3 minutes until warmed and slightly pliable. Remove from heat.
- Divide the beef mixture into four equal portions and gently form them into loose balls. Place each beef ball onto the uncooked side of a warmed pita. Spread the meat evenly to completely cover the pita, creating a thin patty.
- Reheat the skillet to a very high temperature. Place a beef-topped pita (beef-side down) onto the hot skillet. Immediately and firmly press down on the beef patty with a metal spatula or the back of another skillet for several seconds to create a thin, crispy burger. Cook undisturbed for 2-3 minutes until a crispy crust forms. Flip and cook for another 1-2 minutes, or until the beef is cooked through and the pita is lightly toasted. Transfer to a serving plate. Repeat for remaining pitas.
- Top each cooked beef pita generously with chopped Romaine lettuce, diced tomatoes, chopped parsley, chopped dill, red onion, sliced pepperoncini, crumbled feta cheese, creamy tzatziki sauce, and a squeeze of fresh lemon juice. Serve immediately.
Notes
- Make-ahead: While the beef patties are best cooked fresh for maximum crispiness, you can prepare all the fresh toppings and the tzatziki sauce in advance. Store them separately in airtight containers in the refrigerator.
- Store leftover cooked smash burgers in an airtight container in the refrigerator for up to 4 days. Reheat quickly in a skillet or air fryer for best results.
- To freeze, form 2-4 ounce loose ground beef balls (do not smash flat). Flash freeze them on a parchment-lined baking sheet for about 2 hours, then transfer to a freezer-safe bag, removing all air. Freeze for up to 3 months. Defrost in the fridge before smashing and cooking as per instructions.
- Smash Burger Key: For the crispiest edges, cook the burger on a very hot cast iron skillet or griddle and press it down firmly right away. Use a sturdy metal spatula (or the back of a skillet) and press firmly and evenly for a few seconds. This direct contact with the hot surface creates those signature crispy edges. Parchment paper can be used between the beef and the spatula to prevent sticking.
