A few months ago, I had the incredible privilege of joining The Ohio Beef Council on an educational trip to Columbus, Ohio. This immersive experience brought together fellow food bloggers to explore the world of Ohio beef, from farm to fork. It was an enlightening adventure that allowed us to engage directly with two Ohio Beef farming families, gaining firsthand insights into their daily lives, sustainable practices, and unwavering commitment to producing high-quality beef. We learned not only about the intricacies of the beef industry but also practical skills for preparing and cooking various cuts of beef.

Visiting the Heart of Ohio Beef Farms: Dusty Rose Farms

Our journey began at Dusty Rose Farms, a picturesque operation nestled near Amanda in southwest Fairfield County. Here, we were warmly welcomed by Jim and Dee Jepsen and their family, who graciously provided us with a firsthand look into their cattle operation. Dusty Rose Farms spans an impressive 850 acres, dedicated to both row crops and a herd of 60 beef cows. Their cattle are predominantly Angus-based, featuring both a purebred herd and a balance of crossbreds. A key focus for the Jepsens is retaining most calves for their farm’s feedlot, increasingly catering to the growing demand for freezer beef directly from customers. Spending time with this dedicated family was truly inspiring. Their palpable care, passion, and immense pride in their cattle and their business were evident in every aspect of their operation. It was a powerful reminder of the dedication behind the food we eat.

Exploring Innovation at Hoffman Farms

Next, our tour led us to Hoffman Farms, an operation showcasing a larger-scale family cattle business. It was incredibly beneficial to observe both a smaller, more intimate farm and a larger, diversified enterprise, understanding how each manages its unique daily operations. Founded in 1976, Hoffman Farms has continuously embraced innovation and diversification, maintaining its position as a leading cattle operation in Ohio. Christian Hoffman, alongside his father Bob, has spent years enhancing their farm’s practices, focusing on cattle health, value, and environmental stewardship. Together, they manage a 700-head feedlot. Christian primarily oversees the cattle, while Bob manages the crops, demonstrating a synergistic approach crucial for the farm’s dual ventures to thrive and support both men.

What truly distinguishes Christian, beyond the substantial size of his feeder cattle group, is his meticulous attention to feed rations and his proactive experimentation with new, more cost-effective feed sources. The Hoffman family cultivates the traditional mix of corn and soybeans but are also strong proponents of double cropping—a sustainable practice involving planting two crops per year in the same field. This innovative approach allows the family to sell surplus grain while ensuring an ample supply remains for their cattle feed. In addition to corn and soybeans, the Hoffmans also grow barley, wheat, and sorghum, and supplement their feed with distillers grain sourced from a local ethanol plant. This multifaceted strategy highlights their commitment to efficiency, sustainability, and the overall well-being of their livestock.

During our visit, we also delved into the common discussion surrounding grass-fed and grain-fed beef. There are many perceptions and preferences when it comes to the type of beef consumers choose. Our beef tour culminated in an inspiring cooking lesson at The Guild House, a restaurant that stands out as one of the most aesthetically pleasing establishments I’ve ever encountered. Its decor is simply captivating, matched only by the exquisite food it serves. We spent a delightful morning under the expert guidance of Chef Peter Chapman, the head regional chef for Cameron Mitchell Restaurants. Chef Chapman provided us with invaluable insights into various cuts of beef, sharing professional tips and tricks for cooking beef to perfection. We learned how to prepare several fabulous beef dishes, enhancing our culinary skills and appreciation for this versatile protein.

Among the many delights, my absolute favorite was the heavenly Kimchi Fried Rice, beautifully paired with tender beef and a perfectly cooked egg. It was a dish that truly demonstrated the creative potential of beef. In addition to the cooking lesson, we also had the pleasure of spending time with Andrea Hoover, the Beverage Operations Manager and an unparalleled cocktail maker. Andrea taught us how to craft several fun and distinctive cocktails, each perfectly suited for summer entertaining. The entire experience at The Guild House was a masterclass in both cuisine and mixology, leaving us with newfound knowledge and inspiration.

9 Essential Tips for Grilling Beef from The Ohio Beef Council

Now, let’s get to the heart of the matter – those coveted tips for grilling beef like a pro. These guidelines from The Ohio Beef Council are your key to consistent grilling success, ensuring every steak and burger you prepare is nothing short of magnificent.

  1. Select Tender Cuts Wisely: The foundation of a great grilled meal starts with the right cut of beef. For grilling, opt for cuts that are naturally tender and flavorful. The Ribeye, Tenderloin, Porterhouse, Strip steak, and Flat Iron steak are all prime choices. Their superior marbling – those tiny flecks of intramuscular fat – melts during cooking, infusing the meat with incredible juiciness and rich flavor, promising a truly enjoyable eating experience.
  2. Marinade vs. Rub: Know When and How: Marinades are excellent for adding flavor and can also tenderize certain cuts. However, for inherently tender grilling cuts, excessive marinating (more than 30 minutes) can sometimes make the meat mushy or overly acidic. If using a marinade, keep the duration brief. Rubs, on the other hand, are fantastic for layering complex flavors, creating a delicious crust, and enhancing the beef’s natural taste without altering its texture. Apply rubs generously and allow them to adhere for at least 15-30 minutes before grilling.
  3. Prepare Your Grill for Optimal Heat: Success on the grill begins with proper heat. Always preheat your grill thoroughly, aiming for a temperature between 450°F to 500°F before placing any beef on the grates. This initial high heat is crucial for achieving a beautiful sear and locking in juices. After searing your steak for one to two minutes per side at this high temperature, reduce the heat to medium-high for the remainder of the cooking time to ensure even cooking without burning.
  4. Understand Your Grill’s Hot Spots: Every grill has its quirks, including areas that are hotter than others. Take the time to learn where these hot spots are located on your grill. These areas can cause flare-ups and uneven cooking. By knowing your grill’s unique heat distribution, you can strategically place your beef to avoid overcooking in certain spots and achieve more consistent results.
  5. Achieve Professional Diamond Grill Marks: Those iconic diamond grill marks aren’t just for aesthetics; they indicate a perfect sear. To create these professional marks, place your steaks on the preheated grill with the ends positioned at 10 and 4 o’clock. Allow the meat to sear undisturbed for a few minutes. Once a distinct mark forms, rotate the steaks clockwise, positioning their ends at 2 and 8 o’clock. This simple rotation will yield those beautiful, evenly cross-hatched diamond marks.
  6. Preserve Juices: No Poking Allowed! Resist the urge to poke, stab, or pierce your steaks with a grill fork or knife. While it might seem convenient for flipping or checking doneness, doing so creates holes through which valuable, flavorful juices can escape. This leads to a drier, less satisfactory steak. Always use tongs or a spatula to gently move and flip your steaks on the grill, ensuring those delicious juices remain sealed within the meat.
  7. Flip at the Right Moment: The Steak Will Tell You: Knowing when to flip is a common grilling dilemma. When you place a steak on a hot grill, you’ll hear that satisfying sizzle, and initially, the steak will be stuck to the cooking surface. It may remain stuck for three to four minutes. This “sticking” is your steak telling you it’s not ready. Once the steak has developed a full, beautiful sear, it will naturally release from the cooking surface. Additionally, you’ll notice small droplets of liquid collecting on the raw side of the steak. When these two indicators are present, it’s the perfect time to flip your steak.
  8. Ensure Perfect Doneness with a Meat Thermometer: The most accurate and reliable way to determine doneness is by using an instant-read meat thermometer. Insert the thermometer into the side of the steak, avoiding the top or piercing through to the other side, which could release juices. For a medium-rare steak, aim to pull it off the grill when it reads 135°F. Remember, steaks will continue to cook internally for a few minutes after being removed from the heat (this is called carryover cooking). Allow your steak to rest for at least 10 minutes off the grill. This crucial resting period allows the muscle fibers to relax and the juices to redistribute evenly throughout the steak, resulting in a more tender, flavorful, and perfectly cooked final product at its target temperature of 145°F (medium-rare).
  9. Enhance Tenderness by Cutting Against the Grain: The way you slice your steak significantly impacts its eating experience. Once rested, always cut your steak against the muscle grain. The “grain” refers to the direction of the muscle fibers. Cutting perpendicular to these fibers shortens them, making the meat much more tender and easier to chew. This simple technique can dramatically enhance the tenderness of even the finest cuts of beef.
