Why This Mixed Berry Caprese Orzo Salad Will Be Your Go-To Summer Recipe

My affection for pasta salads runs deep, and for excellent reasons. They are the ultimate culinary solution for feeding a crowd, effortlessly scalable for any gathering size, and wonderfully versatile. Leftovers, if you’re lucky enough to have any, transform into delicious, ready-to-go lunches throughout the week, offering a healthy and satisfying meal option. This Mixed Berry Caprese Orzo Salad, in particular, embodies everything I love about summer entertaining: it’s bright, bursting with flavor, incredibly beautiful, and surprisingly simple to prepare, requiring minimal cook time and maximum flavor.

I often find myself returning to a few tried-and-true orzo pasta salad recipes, such as my Greek Orzo Pasta Salad or my refreshing Summer Orzo Pasta Salad. These always receive rave reviews and disappear quickly at any potluck or party. Today’s creation takes inspiration from the classic Caprese, infusing it with a medley of fresh berries to create a truly unique and unforgettable dish. Plump blackberries, sweet strawberries, and vibrant blueberries are tossed with delicate orzo pasta, fragrant fresh basil, crisp mint, and melt-in-your-mouth buffalo mozzarella cheese. The combination of these fresh ingredients delivers a symphony of textures and tastes: the chewiness of the orzo, the burst of fresh berries, the creaminess of the mozzarella, and the aromatic lift from the herbs. But the real secret weapon, the element that elevates this salad from delicious to extraordinary, is the light and luminous lemon-vanilla dressing.

The Secret to the Dressing: Nielsen-Massey’s Premium Extracts

Crafting the perfect dressing is crucial for any salad, and for this Mixed Berry Caprese Orzo Salad, I wanted something that would complement the sweet berries and fresh herbs without overpowering them. The goal was to create a dressing that added a subtle layer of complexity, brightening the flavors and tying all the diverse ingredients together. The result is a simple yet elegant dressing made with high-quality extra virgin olive oil, a touch of honey for natural sweetness, and a harmonious blend of Nielsen-Massey Pure Vanilla Extract and Pure Lemon Extract. These extracts are not just flavorings; they are a testament to Nielsen-Massey’s century-long dedication to crafting the finest vanilla and other natural essences, truly setting them apart in the culinary world.

Nielsen-Massey Pure Vanilla and Lemon Extracts are the secret to this salad’s uniquely flavorful dressing.

For those unfamiliar with Nielsen-Massey Vanillas, allow me to introduce you to a company that has been at the forefront of vanilla crafting for over a century. Their philosophy is simple yet profound: vanilla tastes best when its natural essence is allowed to truly shine. This unwavering commitment to quality is evident in every step of their production process. Unlike many manufacturers who often use heat extraction, which can diminish the delicate flavor compounds, Nielsen-Massey employs a proprietary cold extraction method. This meticulous process ensures that the intricate, complex flavors and aromatic nuances of the vanilla bean are preserved, resulting in an extract that is richer, more nuanced, and incomparably authentic. This dedication to superior extraction is what makes their products a cut above the rest, delivering an unparalleled depth of flavor to your dishes.

The Uncompromised Quality and Versatility of Nielsen-Massey Extracts

Nielsen-Massey’s passion for excellence extends far beyond their extraction process; it begins with the very source of their products: the vanilla bean itself. Every single vanilla bundle and bean is rigorously examined and hand-selected to ensure it meets their exceedingly high standards. They meticulously select only the highest quality beans from the world’s finest growing regions: Madagascar, Mexico, and Tahiti. This discerning approach makes a palpable difference in the final product, a difference you can taste and appreciate in every dish you create. Their commitment to sourcing the best beans globally ensures that each bottle of extract delivers consistent, superior flavor.

Recognizing that vanilla from different regions possesses unique flavor profiles, Nielsen-Massey thoughtfully offers origin-specific vanilla extracts from Madagascar, Mexico, and Tahiti. This allows home cooks and professional chefs alike to select the perfect vanilla to complement their specific culinary creations, whether they desire the sweet, creamy notes of Madagascar vanilla, the smoky and spicy undertones of Mexican vanilla, or the fruity and floral aroma of Tahitian vanilla. This range empowers cooks to fine-tune their recipes and explore the rich diversity of vanilla’s flavor spectrum.

Beyond their renowned extracts, this same level of unwavering commitment and meticulous attention to detail is prevalent in the production of their vanilla beans, sugars, powders, and pastes. Furthermore, all Nielsen-Massey products are proudly Gluten-Free, Allergen-Free, GMO-Free, and Kosher, catering to a diverse range of dietary preferences and needs. They even offer a dedicated line of Organic vanillas, demonstrating their commitment to natural and sustainable practices. The synergy between Nielsen-Massey’s Pure Vanilla Extract and Pure Lemon Extract in this salad’s dressing is truly remarkable. The lemon extract provides a bright, tangy lift, cutting through the richness and adding a much-needed zest, while the vanilla adds a subtle sweetness and aromatic depth that beautifully enhances the natural flavors of the berries and herbs. This unexpected combination creates a unique and irresistible flavor profile that elevates the entire dish. These extracts are incredibly versatile, performing wonderfully not only in sweet applications like baked goods but also in savory dishes, salads, and even marinades for grilling. Their ability to elevate simple ingredients into something extraordinary is why they are a staple in my pantry and an indispensable part of this recipe.

Prep Time: 10 minutes | Cook Time: 10 minutes | Total Time: 20 minutes | Yields: 5 servings

Ingredients

  • 6 oz. orzo pasta, cooked according to package instructions (can substitute with whole wheat or gluten-free orzo)
  • 6 oz. fresh blackberries
  • 6 oz. fresh blueberries
  • 8 oz. fresh strawberries, sliced (approximately 1 ½ cups of sliced strawberries)
  • 4 oz. fresh buffalo mozzarella, sliced in half (roughly ⅔ cup of mozzarella pearls or small balls)
  • ¼ cup fresh basil, finely sliced or chiffonade
  • ¼ cup fresh mint, finely sliced
  • 1 Tablespoon extra virgin olive oil (for the dressing)
  • ¼ teaspoon Nielsen-Massey Pure Lemon Extract
  • ¼ teaspoon Nielsen-Massey Pure Vanilla Extract
  • ½ teaspoon honey (adjust amount to achieve desired sweetness)

Instructions

  1. Cook the orzo pasta according to the package directions until al dente. Once cooked, drain the pasta and immediately rinse it under cold water to stop the cooking process and cool it down. Set the cooled orzo aside in a large mixing bowl.
  2. To the bowl with the cooled orzo, add the fresh blackberries, blueberries, sliced strawberries, fresh buffalo mozzarella (sliced in half), finely sliced basil, and sliced mint. Gently stir all the ingredients together to combine them without crushing the delicate berries.
  3. To prepare the vibrant lemon-vanilla dressing, take a small mason jar with a lid or a small bowl. Add the extra virgin olive oil, Nielsen-Massey Pure Lemon Extract, Nielsen-Massey Pure Vanilla Extract, and honey. Secure the lid on the jar and shake vigorously until all ingredients are thoroughly combined and emulsified. If using a bowl, whisk thoroughly until smooth.
  4. Pour the freshly made dressing evenly over the mixed berry and orzo salad. Gently toss the salad once more to ensure all ingredients are beautifully coated with the flavorful dressing. This step is crucial for distributing the taste evenly throughout the salad.
  5. For optimal flavor development and a refreshing chill, refrigerate the salad for at least one hour before serving. This allows the various flavors to meld together perfectly. However, if time is short, the salad can also be served immediately at room temperature.

Notes on Customization and Serving

  • Fruit Variations: Feel free to customize the fruit selection based on your personal preference or what fresh, seasonal fruits are available. Raspberries, sliced peaches, or nectarines would all make wonderful additions to this salad, offering different textures and flavor nuances.
  • Dressing Adjustments: After the salad has sat for a while, especially if refrigerated, the pasta and fruits may absorb some of the dressing. Before serving, taste the salad and, if needed, you might want to add a bit more extra virgin olive oil and a touch more honey to refresh the flavors and moisture.
  • Cheese Alternatives: For a different flavor profile, this Mixed Berry Caprese Orzo Salad is also fantastic with crumbled feta cheese or tangy goat cheese as a delightful alternative to the creamy buffalo mozzarella.
