Ingredients

  • 4 fresh Hass avocados, halved, pitted, peeled and sliced
  • 2 – 5 oz. cans of albacore tuna in water, drained
  • ½ cup black beans, drained and rinsed
  • 1 medium tomato, diced (about 1 cup)
  • ¼ cup red onion, finely chopped
  • ½ red bell pepper, finely chopped (about 1/2 cup)
  • 1 jalapeño, seeds removed, diced (optional)
  • 2 Tbsp. fresh lime, juiced
  • ¼ cup fresh cilantro, chopped
  • 1 tsp. cumin
  • 1/8 tsp. crushed black pepper

Instructions

  1. In a medium mixing bowl combine the tuna, black beans, tomatoes, red onion, red bell pepper, jalapeño, lime juice, cilantro, cumin and pepper. Taste and add more spice to your liking.
  2. Cut each avocado in half and remove the pit. Using a small spoon, scoop a larger hole in the middle of each avocado and add the removed avocado flesh into the tuna mixture. Gently mix the avocado flesh into the tuna mixture to combine.
  3. Use a ¼ cup measure to scoop the Mexican Tuna Salad mixture into each half of the avocado. Do this with the remaining avocado halves.
  4. Garnish with remaining cilantro before serving.

Notes

  • Serving Suggestion: Serve these Mexican Tuna Stuffed Avocados for lunch or a snack. They also make a great on-the-go meal. To prepare ahead, keep the avocados intact and the tuna salad in a sealed container in the refrigerator. Once you are ready to eat, slice the avocados and scoop the tuna salad into each half.
