Today, I’m excited to share my easy (despite the seemingly long recipe list) Cinnamon Swirl Coffee Cake with you. I have a feeling you all appreciate a good sweet treat!

Lately, I’ve been making frequent stops at Starbucks, putting my gift cards to good use by grabbing my favorite skinny vanilla latte. And, as often happens, I sometimes find myself indulging in their blueberry or cinnamon coffee cake because it’s just so incredibly delicious. One day, it hit me: why not try to make my own version? So, I did!

The batter for this coffee cake is exceptionally thick, creamy, and incredibly flavorful. I mean, truly, really good – I may or may not have licked the bowl clean! Don’t be alarmed by the amount of cinnamon this recipe calls for. It might seem like an excessive quantity (I certainly thought so at first!), but trust me, once it’s all baked, it creates the absolute perfect balance of warm, aromatic spice.
