Effortless Preparation: Your Guide to Mexican Noodle Casserole Perfection

Now, let’s talk about just how incredibly easy this flavorful dish is to assemble. You’ll be surprised at how quickly you can bring this comforting casserole from your kitchen to your table, making it an ideal choice for even the busiest evenings.

A skillet filled with sautéed onions, garlic, and ground turkey, forming the savory base of the Mexican Noodle Casserole.
Building the delicious foundation of our casserole.

The process begins with preheating your oven to 350 degrees F, getting it ready for that perfect cheesy bake. While the oven warms up, bring a pot of water to a boil and cook your No Yolks Noodles according to the package directions until they are perfectly tender. Meanwhile, in a large skillet over medium heat, warm two tablespoons of olive oil. Add the chopped sweet onion and sauté for about 2 minutes until it begins to soften and become translucent. Next, add the minced garlic to the skillet and continue to sauté for another 2 minutes, allowing its fragrant aroma to develop.

Once the aromatics are ready, introduce the ground turkey and the optional chopped jalapeño to the skillet. Cook the turkey, breaking it apart with a spoon, until it is fully cooked through and beautifully browned. This step creates a rich and savory base for the casserole.

Now comes the exciting part of combining all those wonderful flavors! To the skillet with the turkey mixture, add your cooked No Yolks Noodles, the vibrant taco seasoning, sweet canned corn, drained diced tomatoes, and your favorite salsa. Stir everything together until all the ingredients are well combined and coated with the delicious seasonings. Then, fold in half a cup of your chosen cheese, allowing it to start melting into the mixture. Lightly spray a large oven-safe casserole dish with non-stick spray to ensure easy serving. Pour the noodle and turkey mixture into the prepared casserole dish, spreading it evenly across the bottom. Finally, sprinkle the remaining 1 cup of cheese and fresh cilantro generously over the top.

Once baked to perfection, remove the dish from the oven. To add a final flourish of freshness and flavor, garnish your Easy Mexican Noodle Casserole with a medley of toppings. Thinly sliced red onion, juicy cherry tomatoes, extra chopped cilantro, vibrant green onion, and creamy avocado slices all make fantastic additions, allowing each diner to customize their serving. A dollop of extra salsa on the side is also highly recommended!
