Essential Ingredients for Perfect Chicken Enchiladas

Easy Chicken Enchiladas with cilantro

Crafting delicious chicken enchiladas starts with a selection of fresh, high-quality ingredients. While the full list with exact measurements can be found in the recipe card below, here’s a breakdown of the key components and why they matter:

  • Chicken: The star of the show! Boneless, skinless chicken breasts or thighs are ideal for shredding. Cooked and shredded chicken is key for convenience.
  • Diced Tomatoes: Adds a touch of acidity and moisture to the filling, balancing the richness of the cheese and chicken.
  • Flavorful Vegetables:
    • Bell Pepper: Green bell pepper offers a crisp texture and mild, slightly bitter note that complements the other ingredients. Feel free to use red, yellow, or orange for a sweeter flavor.
    • Onion: Sweet onion provides a foundational aromatic flavor that deepens the filling.
    • Diced Green Chilies: A must-have for authentic enchilada flavor, adding a mild, earthy heat without being overly spicy.
  • Aromatic Spices:
    • Cumin: Essential for that classic Mexican flavor profile, offering warmth and depth.
    • Cayenne Red Pepper: Adds a gentle kick of heat. Adjust to your preferred spice level – a little more if you love it spicier!
  • Cheese: The gooey, irresistible heart of any enchilada. We recommend a sharp cheddar for robust flavor, but many varieties work beautifully.
  • Enchilada Sauce: The backbone of the dish, providing moisture and a tangy, savory coating. Use your favorite red enchilada sauce, either homemade or store-bought.
  • Tortillas: Whole wheat tortillas are specified here for a healthier twist, offering a slightly nuttier flavor and more fiber. Corn tortillas are also a traditional and excellent choice.

Step-by-Step Guide to Making the Best Chicken Enchiladas

Making delicious chicken enchiladas is simpler than you might think. Follow these clear steps for a perfect meal:

Step 1: Prepare Your Chicken

The first and most important step is to have your shredded chicken ready. You have several convenient options here: you can cook fresh chicken breasts by boiling, simmering, or baking them until tender, then shredding them with two forks or even a stand mixer. Alternatively, save time by using leftover cooked chicken or opting for a store-bought rotisserie chicken, which can be quickly shredded. If cooking chicken breasts, place them in a wide pan, add a dash of salt and pepper, a bay leaf, and a teaspoon of thyme. Cover with about two inches of water, bring to a boil, then reduce heat to a simmer and cook for 10 minutes. Turn off the heat, cover the pan, and let it sit for another 8-10 minutes, or until the chicken is cooked through and easily shreddable.

Step 2: Craft the Flavorful Filling

In a large mixing bowl, combine the shredded chicken with the diced tomatoes (drained), diced green chiles, finely chopped green bell pepper, and sweet onion. Season this mixture generously with cumin and a touch of red pepper for a bit of warmth. If you prefer a spicier kick, feel free to add a bit more red pepper. Finally, stir in about 1 cup of your shredded cheese. Mix all the ingredients until they are thoroughly combined, ensuring every bite will be packed with flavor. Set this delicious filling aside.

Step 3: Prepare the Baking Dish

Preheat your oven to 350°F (175°C). Take a 9×13-inch baking dish and pour approximately 1/2 cup of your chosen enchilada sauce onto the bottom. Use a spoon or spatula to spread the sauce evenly, ensuring the entire bottom surface is coated. This layer of sauce will prevent the tortillas from sticking and add an extra layer of flavor from the start. Set the prepared dish aside.

Step 4: Assemble the Enchiladas

Arrange your tortillas on a large, clean plate or work surface. For each tortilla, spoon 2-3 generous spoonfuls of the chicken mixture into the center. Carefully roll each tortilla tightly, ensuring the filling is securely enclosed. Place the rolled enchilada into the prepared baking dish, seam-side down, so it stays neatly closed. Continue this process with the remaining tortillas and filling, arranging them snugly side-by-side in the dish until it is full.

Step 5: Add Sauce and Cheese

Once all the enchiladas are neatly arranged in the baking dish, drizzle the remaining 1/2 cup of enchilada sauce evenly over the top of them. This ensures every part of the enchiladas is bathed in flavor. After applying the sauce, generously sprinkle the remaining shredded cheese over the entire dish. This cheese will melt into a golden, bubbly crust, creating that irresistible cheesy goodness.

Step 6: Bake to Perfection

Cover the baking dish tightly with aluminum foil. Place the covered dish into your preheated oven and bake for 15-20 minutes. The foil helps to steam the enchiladas and ensures they heat through evenly without the cheese browning too quickly. After this time, remove the foil and bake for an additional 5-10 minutes, or until the cheese is beautifully melted, bubbly, and slightly golden, and the enchiladas are thoroughly warm on the inside. Garnish your freshly baked enchiladas with fresh cilantro and perhaps some sliced green onions for a burst of fresh flavor and color. Serve immediately with a side of Mexican rice or your favorite accompaniments. Store any leftovers in an airtight container for up to 4 days.

Creative Variations to Customize Your Chicken Enchiladas

The beauty of this easy chicken enchilada recipe lies in its adaptability. Don’t be afraid to experiment with different ingredients to suit your taste or what you have on hand:

  • Beans: For added protein, fiber, and texture, incorporate a can of black beans, kidney beans, red beans, or pinto beans into the chicken filling. For an extra creamy layer, spread refried beans on the tortillas before adding the chicken mixture.
  • Cheese Selection: While sharp cheddar is a classic, the cheese possibilities are endless! Try a blend of Monterey Jack for superior meltiness, pepper jack for a spicy kick, Cotija for a salty, crumbly texture, or Colby for a milder, creamier finish. A Mexican blend cheese is always a great go-to option.
  • Vegetable Boost: Elevate the nutritional value and flavor by adding more chopped vegetables to the chicken mixture. Experiment with any color of bell pepper (red, yellow, orange), poblano peppers for a smoky flavor, zucchini, sweet potatoes (diced and roasted first), corn, or even finely shredded carrots. Adding green onions to the filling or as a garnish provides a fresh, pungent bite.
  • Protein Swaps: Not in the mood for chicken? This recipe works wonderfully with other proteins. Consider using ground chicken, ground turkey, or seasoned ground beef for a heartier meal. You could even use cooked sausage for a different flavor profile.
  • Gourmet Garnishes: The toppings can truly transform your enchiladas! After baking, load them up with fresh avocado slices or creamy guacamole, a dollop of sour cream or Greek yogurt, a sprinkle of fresh cilantro, diced tomatoes, or a vibrant salsa. My personal favorites include zesty pico de gallo, smooth guacamole, tangy salsa verde, bright quick pickled red onions, or the colorful and flavorful cowboy caviar.
  • Sauce Choices: While red enchilada sauce is traditional, don’t hesitate to use a green enchilada sauce (salsa verde) for a brighter, tangier flavor. You can also mix half red and half green for a “Christmas” style enchilada!

Make-Ahead and Storage Tips for Busy Cooks

How to Make Enchilada Sauce in mason jar

These enchiladas are incredibly versatile, perfect for preparing in advance or storing for later enjoyment. Here’s how to do it:

  • Make-Ahead Instructions: You can assemble the enchiladas completely, up to the point of adding the final layer of enchilada sauce and cheese. Cover the baking dish tightly with plastic wrap or aluminum foil and refrigerate for up to 2 days. When you’re ready to bake, remove the dish from the refrigerator, pour over the remaining sauce and cheese, and bake as directed (you might need to add an extra 5-10 minutes to the baking time since the dish will be cold). This also makes them a fantastic gift – just deliver the assembled, unbaked enchiladas with the sauce and cheese on the side for the recipient to add just before baking.
  • Storage: Store any leftover baked enchiladas in an airtight container in the refrigerator for up to 4 days. This keeps them fresh and prevents them from drying out.
  • Reheating: To reheat, individual portions can be warmed in the microwave until heated through. For larger quantities, place the enchiladas back in a baking dish, cover loosely with foil, and heat in a preheated oven at 300°F (150°C) for 15-20 minutes, or until warm and bubbly.
  • Freezing: These enchiladas freeze beautifully! You can freeze them either baked or unbaked.
    • Unbaked: Assemble the enchiladas as directed (without the top layer of sauce and cheese), wrap the dish tightly with plastic wrap and then aluminum foil. Freeze for up to 2-3 months. To bake from frozen, thaw in the refrigerator overnight, then add the sauce and cheese and bake as usual, adding extra time if needed.
    • Baked: Allow baked enchiladas to cool completely. Cut into individual portions or freeze the entire dish, wrapped tightly. Freeze for up to 2-3 months. To reheat from frozen, cover and bake at 325°F (160°C) until heated through, about 30-45 minutes for a full pan, or microwave individual portions.

Delicious Sides to Serve with Chicken Enchiladas

Complete your Mexican feast with these fantastic side dishes that perfectly complement the rich flavors of chicken enchiladas:

  • Mexican Rice: A classic pairing, fluffy and flavorful Mexican rice is a staple.
  • Refried Beans: Creamy and savory, refried beans are easy to make or buy and always a hit.
  • Cilantro Lime Rice: A lighter, zestier alternative to traditional Mexican rice.
  • Fresh Salad: A simple green salad with a vibrant vinaigrette can cut through the richness of the enchiladas.
  • Corn Salad or Esquites: Sweet corn, often with chili powder, lime, and cojita cheese, adds a refreshing texture and flavor.
  • Roasted Vegetables: Roasted bell peppers, onions, or zucchini can add an extra layer of flavor and nutrition.
  • Chips and Salsa/Guacamole: Always a crowd-pleaser for snacking while dinner finishes baking.

Frequently Asked Questions (FAQ)

Here are some common questions about making chicken enchiladas:

  • Can I use corn tortillas instead of whole wheat? Absolutely! Corn tortillas are a traditional choice for enchiladas and will give a slightly different, authentic flavor and texture. Just be sure to warm them slightly before rolling to prevent cracking.
  • What’s the best way to shred chicken? For larger batches, a stand mixer with a paddle attachment works wonders. Place cooked chicken breasts in the bowl and mix on low speed for 30-60 seconds. For smaller amounts, two forks easily pull the chicken apart.
  • How do I prevent my tortillas from breaking when rolling? Gently warm your tortillas before filling. You can microwave them in a stack wrapped in a damp paper towel for 20-30 seconds, or quickly dip them in warm enchilada sauce before filling.
  • Can I make this recipe spicier? Yes! Increase the amount of cayenne red pepper in the filling. You can also add a pinch of chili powder or a dash of hot sauce to the enchilada sauce.
  • Is homemade enchilada sauce worth it? While store-bought sauce is convenient, homemade enchilada sauce offers a fresher, richer flavor with no preservatives. It’s surprisingly easy to make and often worth the extra few minutes.

Prep: 15 minutes
Cook: 20 minutes
Total: 35 minutes
Servings: 6 servings

Ingredients

  • 4 boneless skinless chicken breasts, cooked and shredded
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 can diced tomatoes, drained
  • 2 cans diced green chiles
  • 1 medium green bell pepper, chopped (or use red, yellow, or orange)
  • 1/4 sweet onion, chopped
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne red pepper, {or more if you like it spicier}
  • Salt and freshly ground black pepper to taste
  • 2 cups shredded sharp cheddar cheese, {divided in half, or cheese of your choice}
  • 1 cup red enchilada sauce, divided
  • 8 whole wheat tortillas, or corn tortillas

Instructions

  • Preheat oven to 350°F (175°C). If cooking chicken from scratch, place four boneless, skinless chicken breasts in a wide pan. Season with a dash of salt and pepper, add 1 bay leaf and 1 teaspoon of thyme. Pour enough water into the pan to cover the chicken by about 2 inches.
  • Bring the water to a boil, then immediately reduce the heat to a gentle simmer. Cook the chicken for 10 minutes. After 10 minutes, turn off the heat, cover the pan, and let the chicken sit undisturbed for another 8-10 minutes, or until it is completely cooked through and registers an internal temperature of 165°F (74°C).
  • To shred the cooked chicken: Once cooled slightly, use two forks to pull the chicken breasts apart into shredded pieces. For an even quicker method, place the cooked chicken breasts in a stand mixer with the paddle attachment and mix slowly until shredded.
  • In a large mixing bowl, combine the shredded chicken, drained diced tomatoes, diced green chiles, chopped green bell pepper, chopped sweet onion, cumin, and red pepper. Add 1 cup of the shredded cheese. Mix all ingredients thoroughly until well combined. Set aside.
  • In a 9×13 inch baking dish, spread 1/2 cup of the enchilada sauce evenly across the bottom. This layer prevents sticking and adds flavor. Set the dish aside.
  • Lay your tortillas on a large plate or clean surface. Spoon 2-3 spoonfuls of the chicken mixture into the center of each tortilla. Roll each tortilla tightly and place it seam-side down in the prepared baking dish. Continue this process, arranging the rolled tortillas snugly side-by-side until the dish is full.
  • Drizzle the remaining 1/2 cup of enchilada sauce evenly over the top of the assembled enchiladas. Then, sprinkle the remaining shredded cheese generously over the sauced tortillas.
  • Cover the baking dish tightly with aluminum foil. Bake in the preheated oven at 350°F (175°C) for 15-20 minutes, or until the enchiladas are heated through. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted, bubbly, and slightly golden. Garnish with fresh cilantro and green onions before serving.

Notes

  • You can use a variety of cheese for this dish. I like to mix sharp cheddar with pepper jack cheese for some spice.
  • I like to assemble these enchiladas ahead of time to save myself time.
  • You can assemble them up until the step where you add the enchilada sauce and cheese to the top of the enchiladas. Place the enchiladas in the refrigerator covered until you are ready to cook them. Then you can add the enchilada sauce and cheese when you are ready to cook.
  • This also works great if you want to give this meal to a friend. Just deliver the pan of assembled enchiladas with the enchilada sauce and cheese on the side so they can add that before cooking.
