  1. Heat a large skillet over medium-high heat and add the olive oil. Add the sliced sausage to the skillet and cook until thoroughly browned and slightly crispy. Remove the cooked sausage and set aside.
  2. Reduce heat to medium. Add the minced garlic, diced onion, Cajun spice, salt, and pepper to the skillet. Sauté for 2 minutes until fragrant. Add in the diced bell peppers and chopped celery, and continue to sauté for another 4-5 minutes, or until the vegetables are just tender-crisp.
