  • 2 cups kale
  • 1 – 14.5 oz diced tomatoes, unsalted if possible
  • 1 teaspoon salt, or to taste
  • 1 Tablespoon chili powder

Instructions

  1. Remove the green stems from the cauliflower and chop the head in half. Using a box grater or food processor, grate the whole head of cauliflower (one half at a time) until it resembles rice grains.
  2. In a large skillet, heat the olive oil to medium-high heat. Add the chopped yellow onion and sauté until fragrant and slightly softened, which should take approximately 3 minutes.
  3. Add the grated cauliflower, minced garlic, and finely chopped jalapeño to the skillet. Stir consistently, cooking for about 5-8 minutes, until the cauliflower begins to cook down and starts to turn a light golden brown.
  4. Reduce the heat to medium. Incorporate the kale leaves into the cauliflower rice mixture, stirring gently. Cover the skillet and allow the kale leaves to soften for about 2 minutes.
