  1. In a large pot of generously salted boiling water, cook your chosen pasta according to package instructions until it reaches an al dente texture. Before draining, reserve about 1/2 cup of the starchy pasta cooking water. Drain the cooked pasta and set aside.
  2. Heat the butter and olive oil over medium heat in a large skillet. Add the finely chopped onion and sauté for approximately 5 minutes until it becomes soft, translucent, and fragrant.
  3. Add the minced garlic and the finely chopped fresh sage leaves to the skillet. Cook for just one more minute, stirring continuously, until the garlic is fragrant, being very careful not to let it burn.
  4. Stir in the canned pumpkin puree, heavy cream, and broth into the skillet. Mix thoroughly with a whisk or spoon until the sauce is completely smooth and all ingredients are well combined.
