My White Bean Hummus with Cranberry and Orange is a great tasting dip and the ideal appetizer for serving over the holidays.

Servings: 2 cups
Ingredients
- 1/4 cup extra virgin olive oil
- 1 tablespoon fresh rosemary
- 2 cloves garlic
- 2 – 14 ounce cans cannellini beans (white beans), drained
- 2 tablespoons orange juice
- 1/2 teaspoon salt
- 1/4 cup dried cranberries
- 1/3 cup chopped pecans
Instructions
- Heat olive oil in a skillet over medium-low heat. Add fresh rosemary and peeled garlic cloves. Stir for about a minute until fragrant, then remove the skillet from heat to prevent burning.
- Add all the ingredients, except the chopped pecans, into a food processor (including the infused olive oil, sautéed garlic cloves, and rosemary).
- Blend until very smooth. Adjust the thickness to your taste by adding extra water if needed (1 tablespoon at a time). Adjust salt and pepper to taste.
