- 4 garlic cloves, minced
- 1 jalapeño, diced (optional)
- 1 red bell pepper (or color of your choice), seeds removed, diced
- 1 – 15 ounce can light red kidney beans, drained and rinsed
- 1 – 15 ounce can dark red kidney beans, drained and rinsed
- 3 tablespoons chili powder
- 1 teaspoon chipotle chile powder
- 1 1/2 teaspoons ground cumin
- 2 teaspoons ground Mexican oregano
- 1/2 teaspoon thyme
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cinnamon
- 1 teaspoon paprika
- 1/2 teaspoon cayenne red pepper (optional, for spice)
- 1 – 28 ounce can diced tomatoes
- 1 cup beef broth
- 1 teaspoon sugar
- 2 tablespoons tomato paste
- For Garnish:
- Fresh cilantro, chopped
- Green onions, sliced
- Shredded cheese (Cheddar, Monterey Jack, etc.)
- Sour cream or Greek yogurt (optional)
Instructions
- Brown Chuck Roast: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown all sides of your chuck roast until a deep crust forms. Transfer the browned beef to your slow cooker.
- Sauté Aromatics (Optional): In the same skillet, sauté the diced red onion, bell pepper, garlic, and optional jalapeño for 5-7 minutes until softened and fragrant. Add these to the slow cooker with the beef.
- Combine in Slow Cooker: Add the drained and rinsed kidney beans, diced tomatoes, beef broth, tomato paste, sugar, and all the spices (chili powder, chipotle chile powder, cumin, Mexican oregano, thyme, coriander, cinnamon, paprika, and optional cayenne pepper) to the slow cooker. Stir well to combine, ensuring the chuck roast is mostly submerged.
- Cook Chili: Cover and cook on the low setting for 8 to 10 hours, or on the high setting for 3 to 4 hours, until the beef is incredibly tender.
- Shred & Mix: Once cooked, remove the chuck roast from the slow cooker and shred it using two forks. Return the shredded beef to the chili and stir to integrate.
- Serve & Garnish: Ladle warm chili into bowls. Garnish generously with fresh cilantro, sliced green onions, and shredded cheese. Add sour cream or other favorite toppings as desired.
Notes
- For Thicker Chili: If the chili is not thick enough for your liking, you can add more tomato paste, or stir in a cornstarch slurry (1-2 tablespoons cornstarch mixed with an equal amount of cold water) during the last hour of cooking.
- Adjusting Spice: You can omit the jalapeño for a milder chili, or add more jalapeño (and/or leave seeds in), crushed red pepper, or a dash of hot sauce for extra heat.
- Consistency Tip: If you prefer a thicker chili, you can also drain some of the juice from the diced tomatoes before adding them to the slow cooker.
- Storage: Chili stores well in the fridge for up to 4 days or can be frozen in an airtight container for up to 6 months.
