Key Ingredients for Your Perfect Bowl

The beauty of this soup lies in its simple yet robust ingredients. Each component plays a vital role in creating a harmonious and flavorful dish. For exact quantities and step-by-step instructions, please refer to the full recipe card below.
- Vegetables: Our aromatic base includes fresh celery and carrots, providing a subtly sweet and earthy foundation. We also use high-quality whole tomatoes, which break down to create a rich, tangy broth.
- Spices: A classic blend of Italian herbs—oregano, thyme, and basil—infuses the soup with warm, aromatic notes. These spices complement the tomatoes beautifully, creating that signature comforting taste.
- Spinach: Fresh spinach adds a vibrant color, a slight earthy flavor, and a significant boost of nutrients. If you opt for frozen spinach, remember to thaw it thoroughly and squeeze out any excess water before adding it to the pot to prevent diluting your soup’s flavor.
- Pasta: Orzo, a small, rice-shaped pasta, is the star of this soup. Its delicate size makes it perfect for blending into the broth without overpowering the other ingredients. Alternatively, you can use pastina or any other small pasta shape like ditalini or even tiny alphabet pasta for a fun twist.
- Olive Oil: The foundation for sautéing our aromatics, adding a rich, Mediterranean undertone.
- Vegetable Stock: This forms the flavorful liquid base of our soup. Feel free to use chicken stock if you prefer a non-vegetarian option.
- Garlic: Minced garlic adds a pungent, savory depth that is essential to the soup’s overall flavor profile.
- Salt and Pepper: To taste, enhancing all the other wonderful flavors.
Step-by-Step: How to Make This Tomato Spinach Orzo Soup

Crafting this delicious soup is incredibly simple. Follow these easy steps to bring this comforting dish to your table:
- Cook the Orzo Pasta: Begin by cooking the orzo pasta according to the package directions until al dente. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process and prevent it from clumping. Set it aside. Cooking the pasta separately ensures it doesn’t absorb too much broth and become mushy in the soup.
- Sauté the Vegetables: In a large, sturdy pot or Dutch oven, heat the olive oil over medium-high heat. Add the chopped onion, diced celery, and carrots. Sauté them for about 5-7 minutes, stirring occasionally, until they begin to soften. Then, add the minced garlic and cook for another minute until it becomes wonderfully fragrant. Be careful not to burn the garlic!
- Build the Flavor Base: Pour in the vegetable stock (or chicken stock). Add the whole tomatoes, gently crushing them with a spoon or your hands as you add them to the pot. Stir in the dried oregano, thyme, basil, and season generously with salt and pepper to taste. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pot, and let it simmer for 15 minutes to allow the flavors to meld beautifully.
- Add Spinach and Orzo: Uncover the pot and stir in the fresh spinach. Continue stirring until the spinach has completely wilted into the soup, which typically takes about 2 minutes. Finally, add the pre-cooked orzo pasta to the pot and stir gently to combine all the ingredients.
Serve your warm Tomato Spinach Orzo Soup immediately in cozy soup bowls. Garnish with a sprinkle of fresh basil leaves for an extra pop of flavor and color. For the ultimate comforting meal, serve alongside grilled cheese sandwiches—perfect for dipping!
Expert Tips for the Best Tomato Spinach Orzo Soup
Elevate your soup-making game with these simple yet effective tips:
- Tomato Quality Matters: Using good quality canned whole tomatoes (San Marzano are excellent) will significantly improve the depth of flavor. Crushing them by hand before adding to the pot gives a rustic texture.
- Fresh Herbs for Garnish: While dried herbs are used in cooking, a sprinkle of fresh basil or parsley just before serving adds a vibrant aroma and fresh taste.
- Don’t Overcook the Orzo: Cook the orzo separately and slightly al dente, as it will continue to cook a bit when added to the hot soup. This prevents it from becoming mushy.
- Adjust Broth to Your Liking: If you prefer a thinner soup, feel free to add a splash more stock or water. For a richer flavor, consider using homemade vegetable or chicken broth.
- Spice It Up: For a subtle kick, add a pinch of red pepper flakes along with the other spices in Step 3.
- A Creamy Touch: For an extra luxurious texture, stir in a splash of heavy cream, half-and-half, or coconut milk (for a dairy-free option) at the very end.
- Season in Layers: Taste and adjust seasonings throughout the cooking process. A little extra salt and pepper can make all the difference.
Serving Suggestions
While this soup is wonderfully satisfying on its own, here are some delightful ways to serve it:
- The Classic Pairing: Grilled Cheese: There’s no more iconic duo than tomato soup and grilled cheese. The crispy, cheesy sandwich is perfect for dipping into the warm, flavorful broth.
- Crusty Bread: A thick slice of crusty artisan bread, a fresh baguette, or a piece of garlic bread makes an excellent companion for soaking up every last drop.
- Side Salad: For a complete and balanced meal, serve your soup alongside a light, fresh green salad with a simple vinaigrette.
- Garnish Galore: Beyond fresh basil, consider a sprinkle of grated Parmesan cheese, a swirl of extra virgin olive oil, or a dollop of pesto for added flavor and visual appeal.
Storage Tips
This soup is great for meal prepping or enjoying as leftovers!
- Refrigeration: Store any leftover Tomato Spinach Orzo Soup in an airtight container in the refrigerator for up to 4 days.
- Reheating: To reheat, gently warm the soup on the stove over medium-low heat until heated through, or use the microwave in individual portions. You might need to add a splash of extra broth or water if the soup has thickened too much overnight.
- Freezing: This soup can be frozen, though the texture of the orzo pasta might become slightly softer upon thawing. Freeze in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator before reheating.
Frequently Asked Questions (FAQs)
Here are answers to some common questions about making this delicious soup:
- Can I make this soup vegetarian or vegan?
- Yes, absolutely! This recipe is naturally vegetarian if you use vegetable stock. To make it vegan, ensure you use vegetable stock and omit any cheese garnishes. It’s a fantastic plant-based meal as is.
- What if I don’t have orzo pasta? Can I use other types of pasta?
- Of course! Any small pasta shape will work beautifully. Pastina, ditalini, small elbow macaroni, or even broken spaghetti pieces are great substitutes. Adjust cooking times according to package directions for your chosen pasta.
- Can I add protein to this soup?
- Yes, you can easily boost the protein content. Cooked shredded chicken, white beans (like cannellini or navy beans), or chickpeas would all be excellent additions. Add them during the last few minutes of simmering to heat through.
- Is this soup suitable for meal prepping?
- Absolutely! This soup holds up well in the refrigerator for several days, making it perfect for meal prepping your lunches or dinners for the week. The flavors often deepen and improve overnight.
- How can I make the soup thicker or thinner?
- If you prefer a thicker soup, you can mash some of the tomatoes and vegetables against the side of the pot while simmering, or even blend a small portion of the soup with an immersion blender (be careful with hot liquids!). For a thinner consistency, simply add more vegetable or chicken stock until it reaches your desired texture.
