Essential Ingredients & Smart Substitutions for Your Soup
Crafting the perfect Italian Wedding Soup begins with selecting fresh, high-quality ingredients. Here’s a detailed look at what you’ll need and how you can adapt the recipe to suit your preferences or what you have on hand:
- Olive Oil: The foundation of our sautéed aromatics. We highly recommend extra virgin olive oil for its rich, nutty flavor that complements Italian dishes beautifully. However, if olive oil isn’t available or preferred, you can easily substitute it with any light-flavored oil such as vegetable oil, sunflower oil, or avocado oil.
- Base Flavors (Mirepoix): A classic trio of sweet onion, fresh garlic, and tender carrots forms the aromatic base for this soup, creating a rich depth of flavor. This combination is essential for building a robust and inviting broth. For an even more complex flavor profile, consider adding a stalk of finely diced celery to your sautéing vegetables.
- Broth: A good quality chicken broth is key to the soup’s savory profile. Look for low-sodium options to better control the seasoning. For a vegetarian or vegan version, a flavorful vegetable broth makes an excellent substitute, ensuring the soup remains equally delicious.
- Herbs: We use dried oregano to infuse the soup with classic Italian warmth. One teaspoon provides a subtle herbaceous note. If you have fresh oregano, you can use a tablespoon, finely chopped, for a brighter flavor. Other dried Italian herbs like basil or a mixed Italian seasoning blend can also be used.
- Tomatoes: A can of diced tomatoes adds a lovely acidity and a touch of sweetness to the broth, enhancing its overall complexity. Fire-roasted diced tomatoes can provide a smoky depth, or for a smoother broth, crushed tomatoes are a great alternative. If you prefer a clear broth, you can omit the tomatoes entirely and add a bit more broth or water.
- Greens: Escarole, with its slightly bitter yet refreshing crunch, is our preferred green, adding a wonderful texture and nutritional boost. One pound, trimmed and coarsely chopped, works perfectly. However, feel free to substitute with other healthy greens like nutrient-rich spinach, sturdy kale (massaged first for tenderness), or Swiss chard, depending on your preference.
- Pasta: Small pasta shapes are traditional for Italian Wedding Soup. Acini de pepe is excellent for its tiny, pearl-like shape that blends seamlessly into the broth. Other fantastic alternatives include orzo, ditalini, or even pastina, all of which add satisfying substance to the soup without overwhelming it.
- Cheese: A generous sprinkle of freshly grated Parmesan cheese before serving adds a salty, umami finish that truly ties all the flavors together. Always opt for fresh Parmesan over pre-grated for the best flavor and melt. Pecorino Romano could be used for a sharper, saltier kick.
Ingredients for Wholesome Turkey Meatballs
Our light and flavorful turkey meatballs are the heart of this soup. Here’s what you’ll need to make them:
- Ground Turkey: Lean ground turkey (one pound) is an excellent choice for these meatballs, offering a lighter protein option without sacrificing flavor. It’s naturally lower in fat than traditional beef or pork, making the soup feel less heavy. This amount typically yields enough meatballs to serve 6 diners generously.
- Egg: A large egg, lightly beaten, acts as a binding agent, helping to hold the meatballs together while adding essential moisture. This ensures your meatballs remain tender and don’t crumble during cooking.
- Breadcrumbs: Plain dried breadcrumbs contribute to the meatball’s structure and tenderness. They absorb moisture, preventing the meatballs from becoming too dense. For a gluten-free option, use gluten-free breadcrumbs.
- Parmesan Cheese: Grated Parmesan cheese is incorporated directly into the meatball mixture, infusing them with a savory, cheesy flavor that complements the broth beautifully. Use freshly grated Parmesan for the best taste.
- Seasoning: Simple seasonings are all that’s needed to let the natural flavors shine. A pinch of sea salt and freshly ground black pepper brings out the best in the turkey and other ingredients. Don’t be shy about seasoning to taste!

Crafting Your Homemade Italian Wedding Soup: Step-by-Step
Creating this delicious Italian Wedding Soup is a straightforward process, even for beginner cooks. Follow these simple steps for a truly rewarding culinary experience:
Step 1: Expertly Prepare Your Turkey Meatballs: Begin by combining all your meatball ingredients – ground turkey, minced garlic, a lightly beaten egg, breadcrumbs, grated Parmesan, and a good dash of salt and pepper – in a large mixing bowl. Gently mix with your hands until just combined, being careful not to overmix, which can lead to tough meatballs. Form the mixture into small, uniform 1-inch (or slightly smaller) meatballs. Place them neatly on a plate or baking sheet as you go, ready for cooking. Uniform size ensures even cooking.
Step 2: Sauté the Aromatic Vegetable Base: In a large, sturdy pot or Dutch oven, heat the olive oil over medium heat. Once shimmering, add the diced sweet onion and sauté for about 1 minute until it starts to soften and become translucent. Next, introduce the minced garlic, chopped carrots, and dried oregano. Continue to sauté for another 4-5 minutes, stirring occasionally, until the vegetables are fragrant and slightly tender, and the flavors have had a chance to meld beautifully. This step is crucial for building the soup’s flavor foundation.
Step 3: Simmer to Perfection with Meatballs, Greens, and Pasta: Pour in the chicken broth and add the diced tomatoes, bringing the mixture to a gentle simmer. Carefully add the prepared turkey meatballs to the simmering broth. Resist the urge to stir immediately; allow them to cook undisturbed until they naturally float to the surface, which typically takes about 5 minutes. This indicates they are starting to cook through. Once the meatballs are floating, add the coarsely chopped escarole and the small pasta. Continue to simmer until the escarole is wilted and tender, the pasta is cooked al dente, and the meatballs are thoroughly cooked (ensure they reach an internal temperature of 160 degrees F, which usually takes about 12 minutes in total).
Step 4: Garnish and Serve Your Heartwarming Soup: Before serving, taste the soup and adjust the seasoning with additional salt and freshly ground black pepper as needed. Ladle generous portions into bowls. For an irresistible finish, sprinkle with a final flourish of freshly grated Parmesan cheese. Serve your comforting Italian Wedding Soup piping hot, ideally alongside some warm crusty bread for dipping into the flavorful broth. Enjoy this delightful homemade masterpiece!
Creative Recipe Modifications & Variations
One of the best aspects of this Italian Wedding Soup is its versatility. Don’t hesitate to personalize it with these delightful modifications:
- Meatball Variations: While ground turkey offers a lighter touch, you can certainly swap it for other ground meats to alter the flavor profile. Ground beef, ground pork, or a combination of beef and pork (often called “meatloaf mix”) make excellent, richer alternatives. For an even leaner option, try ground chicken. Ensure all meats are cooked to their safe internal temperatures.
- Pasta Choices: We love acini de pepe for its delicate size, but the world of small pasta offers many exciting options. Orzo pasta, with its rice-like shape, is another popular choice. Ditalini, pastina, or even broken spaghetti pieces can also work wonderfully, adding a varied texture to your soup.
- Greens Galore: Escarole provides a unique, slightly bitter note, but any leafy green can be a fantastic addition. Nutrient-packed chard, vibrant spinach (add at the very end as it wilts quickly), or robust kale are all excellent choices. If using kale, consider massaging it with a little olive oil before adding it to the soup to tenderize its leaves.
- Boost with More Vegetables: This soup is an ideal canvas for adding extra vegetables. Feel free to incorporate diced zucchini, colorful bell peppers, green beans, or thinly sliced celery for added nutrients, texture, and flavor. You can also roast some butternut squash or sweet potatoes separately and add them to the soup for a hint of sweetness and creaminess.
- Delicious Plant-Based Option: For a delightful vegetarian or vegan rendition, simply omit the turkey meatballs and use vegetable broth instead of chicken broth. To maintain a hearty and protein-rich soup, add cooked cannellini beans (white beans), chickpeas, or even lentils. You can also create plant-based “meatballs” using mushrooms and breadcrumbs.
Make-Ahead Mastery Tip: For even richer flavors and a smoother mealtime, prepare this soup earlier in the day or even the day before. Allowing the soup to rest gives the ingredients time to meld and deepen, resulting in an even more intensely flavorful experience. The broth absorbs the essence of the meatballs, herbs, and vegetables, transforming into a culinary masterpiece. Simply reheat gently on the stove when you’re ready to indulge.

Smart Storage Solutions for Your Italian Wedding Soup
Proper storage ensures you can enjoy your delicious Italian Wedding Soup for days to come. Here are our top tips for keeping it fresh and flavorful:
- Refrigerating Leftovers: Once the soup has cooled completely, transfer any leftovers to an airtight container. Store it in the refrigerator, where it will remain fresh and delicious for up to 3 days. This makes it perfect for quick and easy meal solutions throughout the week.
- Effortless Reheating: To reheat your leftover soup, gently place it in a pot on the stove over medium-low heat. Stir occasionally until it’s piping hot. If the soup appears too thick after refrigeration, add a splash of water or extra broth to achieve your desired consistency. You can also stir in some fresh greens or a sprinkle of fresh herbs to revitalize the flavors.
- Freezing the Complete Soup: For longer storage, this soup freezes beautifully. Once it’s fully cooked and has cooled down to room temperature, transfer it into freezer-safe airtight containers or heavy-duty freezer bags. It can be stored in the freezer for up to 3 months. When you’re ready to enjoy, simply defrost the soup thoroughly in the refrigerator overnight, then reheat it on the stove as described above.
- Batch Freezing Meatballs: A fantastic meal prep hack is to double the turkey meatball recipe. After forming them, you can bake half of the meatballs separately at 350 degrees F for about 25-30 minutes, or until they reach an internal temperature of 160 degrees F. Allow them to cool completely, then place them in a freezer-safe ziplock bag. These pre-cooked, frozen meatballs are perfect for quick additions to pasta sauces, other soups, or a simple weeknight meal, saving you valuable time.

Italian Wedding Soup
Julia Jolliff
20 minutes
15 minutes
35 minutes
6 servings
Ingredients
- 2 tablespoons olive oil
- 1/2 sweet onion, diced
- 2 cloves garlic , minced
- 1 teaspoon oregano
- 2 carrots, peeled, chopped
- 32 ounces chicken broth
- 1 can diced tomatoes
- 1 escarole, 1 pound total trimmed and coarsely chopped {you can sub spinach or kale}
- 1 cup acini de pepe pasta, or other small pasta
- 1 pound ground turkey
- 1 large egg, lightly beaten
- 1/2 cup breadcrumbs
- 1/2 cup Parmesan cheese, grated, plus more for garnish
- Salt and pepper to taste
Instructions
-
In a large mixing bowl combine turkey, garlic, egg, breadcrumbs, Parmesan, and a dash of salt and pepper. Form the turkey mixture into 1-inch {or a bit smaller} turkey meatballs and set on a plate.
-
In a large pot heat the olive oil over medium heat. Add the onion and sauté for 1 minute. Add the garlic, carrots and oregano and continue to sauté for 4-5 minutes.
-
Add broth and tomatoes and bring to a simmer. Add the meatballs and cook without stirring, until meatballs float to surface (about 5 minutes). Add escarole and pasta to the pot and simmer until the escarole is wilted and the pasta is soft making sure the meatballs are cooked through (the meatballs took about 12 minutes total to reach 160 degrees F).
-
Season with salt and pepper. Sprinkle with Parmesan cheese and serve with warm bread for dipping.
Notes
- When I make this recipe I double the recipe for the turkey meatballs and throw half of them in the oven at 350 for about 30 minutes (or until the temperature inside the meatball reaches 160 degrees F). I let them cool and put them in a Ziplock bag to freeze for later. They are perfect to use throughout the week to feed my little one or to throw in a batch of pasta sauce.
- I use 1 head of escarole {or a bit less} and chop it up into small pieces. If you can’t find that feel free to use spinach or kale.
- My husband doesn’t always like tomatoes in soup so sometimes I leave that out and do more broth in its place. You can also used fire roasted tomatoes in place of diced.
- If you want to leave the meat out you can use vegetable broth and add beans. Try white beans or chickpeas for protein.
- Feel free to add more vegetables to this soup. I like adding zucchini, bell peppers and celery sometimes.
