There’s an undeniable magic to a perfectly grilled burger, especially when adorned with the right toppings. Our Tex Mex Burger takes that magic to the next level by drawing inspiration from two pillars of Tex-Mex cuisine: fresh, vibrant guacamole and tangy, crisp pico de gallo. These aren’t just toppings; they are essential components that complete the entire flavor profile, making each bite an exhilarating journey of taste and texture. I adore both of these fresh additions so much that they frequently appear in my weekly meals, and integrating them into a burger creates an irresistible combination.
This recipe builds on the success of past favorites, such as the Easy Avocado Burger, which celebrated the creamy goodness of guacamole. It also follows in the footsteps of the exquisite Greek Burger Recipe, topped with refreshing tzatziki, and last month’s savory Easy Blue Cheese Burger, a bold pairing of beef and pungent blue cheese. This Tex Mex variant brings its own unique charm, blending the familiar comfort of a beef patty with the lively, aromatic notes of Mexican-inspired condiments.

The Heart of Tex-Mex Flavors: Guacamole and Pico de Gallo
The secret to this Tex Mex Burger’s irresistible appeal lies in its fresh, homemade toppings. Guacamole and pico de gallo are not just condiments; they are vibrant flavor boosters that transform a simple burger into a gourmet meal.
Creamy Homemade Guacamole
Our guacamole is a smooth, rich indulgence that adds an incredible layer of texture and flavor. Made with ripe avocados, a squeeze of fresh lime juice, finely diced red onion, juicy tomatoes, a hint of salt, and fragrant cilantro, it’s a refreshing counterpoint to the savory burger. The lime juice not only brightens the flavors but also helps prevent the avocado from browning, keeping your guacamole looking as good as it tastes. While store-bought guacamole can be a time-saver, preparing it fresh allows you to control the seasoning and achieve that perfect creamy consistency.
Fresh Pico de Gallo
Pico de gallo, also known as salsa fresca, is all about freshness. This chunky salsa combines ripe red tomatoes, crisp red onion, bright lime juice, and chopped cilantro. Unlike smoother salsas, pico de gallo’s distinct texture offers a satisfying crunch and a burst of juicy flavor with every bite. The acidity from the lime cuts through the richness of the burger, while the fresh herbs add an aromatic lift. A small diced jalapeño in the pico de gallo also adds another layer of subtle heat, complementing the sliced jalapeños on top of the burger.

Choosing Your Cooking Method: Grilling vs. Skillet
One of the best features of this Tex Mex Burger is its adaptability. You can achieve fantastic results whether you prefer to cook it outdoors on the grill or indoors in a skillet. Each method offers a slightly different experience, catering to your preferences and circumstances.
Grilling for Smoky Flavor
Grilling imparts a wonderful smoky flavor and creates those desirable char marks that add texture and depth. It’s the quintessential summer cooking method, perfect for backyard BBQs and gatherings. When grilling, aim for medium-high heat to ensure a good sear without overcooking the inside. Make sure your grill grates are clean and oiled to prevent sticking.
Skillet Cooking for Year-Round Convenience
If grilling isn’t an option, a cast iron or heavy non-stick skillet on the stove delivers equally delicious results. Skillet cooking ensures an even crust across the entire surface of the patty, locking in juices and flavor. It’s a fantastic year-round option, especially when the weather isn’t cooperating for outdoor cooking. Use a medium-high heat setting to get that perfect sear and ensure your burgers cook through beautifully.
Essential Ingredients for Your Tex Mex Masterpiece
Crafting the perfect Tex Mex Burger begins with high-quality ingredients. Here’s a closer look at what you’ll need to gather:
- Burgers: You can opt for convenience with pre-made beef patties, or take pride in crafting your own from fresh ground beef. For homemade patties, choose ground beef with an 80/20 lean-to-fat ratio for maximum juiciness and flavor. Season generously with salt and black pepper before forming them into patties slightly wider than your buns, as they will shrink during cooking.
- Jalapeños: Freshly sliced jalapeños are essential for that signature spicy kick. If you prefer less heat, remove the seeds and membranes before slicing. For an even bolder flavor, you could briefly grill or sauté the jalapeños before adding them. Pickled jalapeños can also be used for a tangier, milder heat.
- Buns: A good bun is the foundation of any great burger. Classic brioche buns offer a slightly sweet, rich flavor and soft texture, while pretzel buns provide a chewy contrast. For a lighter, healthier option, consider serving your burger in a large romaine lettuce leaf or iceberg lettuce cup for a delicious lettuce wrap burger.
- Guacamole: As discussed, homemade guacamole brings unparalleled freshness and creaminess. Ensure your avocados are perfectly ripe – soft but not mushy. Mash them to your desired consistency; some prefer chunky, others prefer smooth. Don’t forget the fresh lime juice to keep it vibrant and flavorful.
- Pico de Gallo: This fresh salsa is the ideal finishing touch. The key to excellent pico de gallo is finely diced ingredients. Use firm, ripe Roma tomatoes, crisp red onion, fresh cilantro, and a dash of lime juice. A small diced jalapeño can be added for a bit more zip. The vibrant colors and textures make this topping truly stand out.

Crafting Your Perfect Tex Mex Burger: Step-by-Step Guide
Follow these simple steps to create a delicious Tex Mex Burger that’s bursting with flavor:
- Prepare Your Grill or Skillet: If grilling, preheat your grill to medium-high heat (around 400-450°F or 200-230°C). For skillet cooking, place a large cast iron or heavy non-stick skillet over medium-high heat until hot. Lightly oil the grates or skillet to prevent sticking.
- Cook the Burgers: Place your beef patties on the preheated grill or skillet. Cook for about 6-7 minutes per side for a medium doneness. The exact time will vary based on thickness and desired doneness. Burgers are safely cooked when their internal temperature reaches 160°F (71°C). Avoid pressing down on the burgers with your spatula, as this squeezes out valuable juices.
- Prepare the Guacamole: While the burgers are cooking, in a medium bowl, combine your mashed avocados, fresh lime juice, diced red onion, chopped Roma tomatoes, salt, and optional chopped cilantro. Mix gently until just combined and creamy. Taste and adjust seasoning as needed.
- Make the Pico de Gallo: In a separate bowl, combine all the pico de gallo ingredients: diced sweet or red onion, chopped large tomatoes, fresh lime juice, diced small jalapeño, and chopped cilantro. Stir well to combine, then taste and adjust the seasoning to your preference.
- Assemble Your Burgers: Once the burgers are cooked, lightly toast your buns if desired. Place the bottom half of each bun on a plate. Layer with a cooked burger patty. Top the burger generously with sliced fresh or pickled jalapeños, a generous spoonful of creamy guacamole, and a scoop of fresh pico de gallo. Finish with the top half of the bun and serve immediately.

Customization is Key: Elevate Your Burger Experience
One of the joys of making homemade burgers is the endless possibilities for customization. The Tex Mex Burger, with its bold flavors, is particularly receptive to creative additions and variations. Don’t hesitate to make it your own!
- Cheese, Please!: Cheese is almost always a welcome addition to any burger. For a Tex-Mex twist, try melting a slice of zesty pepper jack, sharp cheddar, or crumbly cotija cheese over your patty during the last minute of cooking. Monterey Jack or a Mexican blend would also be fantastic choices, adding a gooey, savory layer.
- Grilled Vegetables: Elevate the freshness and texture by adding grilled vegetables. Bell peppers (especially red, orange, or yellow), poblano peppers for a milder smoky heat, or even sweet baby peppers can be sliced, lightly oiled, and grilled alongside your burgers. Sautéed onions or corn kernels (especially grilled corn) would also integrate beautifully into the Tex-Mex profile.
- Extra Greens: While lettuce wraps are an option, a crisp layer of greens inside your bun adds a refreshing crunch. Beyond traditional romaine or iceberg, consider peppery arugula for a sophisticated bite or a spring mix for diverse flavors and nutrients.
- Sauce It Up with More Salsa: If you’re a salsa enthusiast, the sky’s the limit! In addition to pico de gallo, consider layering on extra salsa. Our Homemade Salsa offers a classic flavor, while Mango and Black Bean Salsa adds a sweet and savory tropical twist. For something unique, try Avocado Tomatillo Salsa, or a vibrant Easy Homemade Salsa Verde for an authentic, tangy kick. A dollop of sour cream or Mexican crema can also add a delightful coolness.
- Protein Alternatives: While beef is classic, feel free to experiment with other protein sources. Ground turkey or chicken burgers can be seasoned with Tex-Mex spices for a leaner option. Black bean burgers or other veggie patties can also be transformed into a Tex Mex delight with these toppings.
Perfect Pairings: What to Serve with Your Tex Mex Burger
No burger feast is complete without the perfect sides. These Tex Mex Burgers pair wonderfully with a variety of dishes, enhancing the overall meal experience.
- Delectable Potatoes: Potatoes are practically synonymous with burgers, and we have some fantastic options. Try the indulgent Air Fryer Twice Baked Potatoes for a crispy, fluffy side, or the incredibly creamy Gouda Smashed Potatoes. For a spicy kick that complements the Tex-Mex theme, these Spicy Lebanese Potatoes are an unexpected but delicious match. Classic sweet potato fries or a simple serving of tortilla chips with extra salsa are also great choices.
- Fresh and Flavorful Vegetables: Round out your meal with a healthy and delicious vegetable side. Our Mediterranean Roasted Vegetables offer a hearty and aromatic option. For something quick and easy, Simple Garlic Parmesan Green Beans are always a hit. Alternatively, the earthy tones of Turmeric Cauliflower provide a unique and healthy accompaniment. A simple grilled corn on the cob seasoned with chili powder and lime juice would also be perfect.
- Refreshing Salads: I’m a firm believer that you can never have too many salads, especially when serving burgers. The light and zesty Summer Orzo Pasta Salad offers a delightful pasta option. For a protein-packed and flavorful side, try the Mediterranean Bean Salad. To lean into the Tex-Mex theme even further, the vibrant Mexican Street Corn Salad is a must-try. And for a peppery contrast, the Lemon Arugula Salad with Pine Nuts is a sophisticated choice.
