Key Ingredients for Your Cherry Almond Cake

Creating this irresistible cake starts with a selection of high-quality, straightforward ingredients. Each component plays a crucial role in achieving the cake’s signature light texture and rich flavor. Here’s what you’ll need to gather:

Essential Dry Ingredients

  • All-Purpose Flour: This forms the structural foundation of our cake. For those looking for a gluten-free option, I highly recommend Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour. It consistently delivers excellent results, yielding a moist and tender gluten-free cake.
  • Granulated Sugar: Provides the perfect level of sweetness to the cake batter. You can opt for either refined or unrefined granulated sugar. An additional tablespoon is sprinkled over the top with the cherries and almonds, creating a lovely caramelized crust. Coconut sugar can also be used as a natural alternative.
  • Baking Powder & Baking Soda: These two leavening agents work in harmony to give the cake its beautiful rise and airy texture. Baking powder provides initial lift, while baking soda reacts with acidic ingredients (like the natural acids in milk or cherries) to further enhance the rise.
  • Salt: A pinch of salt is essential to balance the sweetness and enhance all the other flavors in the cake, preventing it from tasting flat.

Key Wet Ingredients

  • Eggs: I use two medium-sized, free-range eggs. Eggs contribute to the cake’s structure, richness, and help bind the ingredients together, ensuring a moist and cohesive crumb.
  • Whole Milk: Whole milk adds moisture and richness to the batter. While I prefer whole milk for its full flavor, you can easily substitute it with a dairy-free alternative such as almond milk, soy milk, or oat milk for a dairy-free version of the cake. Skimmed milk is not recommended as it lacks the necessary fat content.
  • Vegetable Oil: Incorporating vegetable oil (or sunflower oil or a light olive oil) into the batter is key to achieving an incredibly moist and tender cake. Unlike butter, oil remains liquid at room temperature, contributing to a softer texture that stays fresh longer.
  • Vanilla Extract: A good quality vanilla extract is indispensable for enhancing the overall flavor profile of the cake, adding a warm, aromatic depth that complements both the cherries and almonds beautifully. Use pure vanilla extract for the best natural flavor.

Signature Flavors and Toppings

  • Fresh Cherries: The star of the show! Fresh, pitted cherries are scattered over the top of the batter. As the cake bakes, some cherries will gently burst, releasing their sweet, tart juices into the cake, creating pockets of fruity goodness and adding an extra layer of moisture and flavor.
  • Sliced Almonds: Added to the top of the cake, sliced almonds not only infuse a wonderful nutty flavor but also provide a delightful textural contrast and a pleasant crunch with every bite. If you or your guests have a nut allergy, these can be omitted entirely without compromising the cake’s deliciousness.

Creative Variations and Topping Ideas for Your Cherry Almond Cake

While this easy cherry almond cake is absolutely divine as is, topped with fresh cherries for a burst of fruity flavor and sliced almonds for texture, it’s also a fantastic canvas for culinary creativity. Don’t hesitate to experiment with different flavors and textures to make this cake uniquely yours. Here are some inspiring suggestions to get you started:

  • Fruit Swaps: The beauty of this recipe lies in its adaptability. Instead of cherries, consider using other fresh fruits like sweet raspberries, plump blueberries, thinly sliced apples or pears, juicy peaches, or tangy rhubarb. Each fruit will lend its own unique character to the cake.
  • Spice Infusions: Elevate the cake’s warmth and aroma by adding a touch of spice to the batter. Ground cinnamon, a pinch of clove, or a dash of nutmeg can transform the flavor profile, making it perfect for autumn or holiday baking.
  • Nutty Alternatives: If almonds aren’t your preference, or you simply want to try something new, swap them out for other crushed nuts. Walnuts, hazelnuts, or even toasted shredded coconut would add a wonderful new dimension of flavor and crunch.
  • Chocolate Indulgence: For the chocolate lovers, turn this into a delectable cherry chocolate cake! Simply add 1-2 tablespoons of unsweetened cocoa powder to the dry ingredients, and then fold in a handful of chocolate chips (dark, milk, or white) into the batter before baking.
  • Delicious Icings and Glazes: While delicious on its own, a simple icing can add an extra layer of decadence.
    • Cream Cheese Icing: Beat softened cream cheese with powdered sugar and a touch of vanilla for a rich, tangy topping.
    • Almond Glaze: Whisk powdered sugar with a tablespoon or two of milk (or almond milk) and a few drops of almond extract for a simple, elegant glaze.
    • Lemon Glaze: Combine powdered sugar with lemon juice for a bright, zesty finish that pairs beautifully with cherries.

Step-by-Step Guide: How to Make Cherry Almond Cake

Baking this delightful cake is a straightforward process that yields impressive results. Follow these simple steps, and you’ll have a moist and flavorful Cherry Almond Cake ready to enjoy in no time.

Detailed Instructions:

  1. Get Ready to Start Baking: Begin by preheating your oven to 356°F (180°C). Prepare a 9-inch springform pan by generously greasing it with butter, then carefully placing a circle of parchment paper on the bottom. This ensures easy release after baking and prevents sticking.
  2. Prepare the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and a pinch of salt. Use a whisk to thoroughly combine these dry ingredients, ensuring they are evenly distributed.
  3. Now Prepare the Wet Ingredients: In a separate bowl or a large measuring jug, crack the two medium eggs and beat them lightly. Add the whole milk, vegetable oil, and vanilla extract. Whisk these wet ingredients together until they are well combined.
  4. Make the Cake Batter: Pour the wet milk mixture into the bowl containing all the dry ingredients. Stir everything together just until a thick, uniform cake batter forms. Be careful not to overmix, as this can lead to a tough cake. A few small lumps are perfectly fine.
  5. Bake the Cake: Transfer the prepared cake batter into your greased and lined 9-inch springform pan. Gently spread the batter evenly. Place the springform pan onto a baking tray (this catches any potential drips and makes it easier to handle).
  6. Add Toppings: Evenly scatter the pitted fresh cherries over the top of the cake batter. Sprinkle half of the reserved granulated sugar over the cherries, then arrange the sliced almonds artfully over the top. Finally, sprinkle the remaining sugar over the almonds.
  7. Bake to Perfection: Place the baking tray with the cake into your preheated oven. Bake for approximately 1 hour. The cake is done when a wooden skewer or toothpick inserted into the center comes out clean, with no wet batter attached.
  8. Cool Completely: Once baked, carefully remove the tray from the oven and place it on a wire rack to cool completely. This cooling process is crucial for the cake’s structure and flavor development. Do not attempt to remove the cake from the pan until it is fully cooled.
  9. To Serve: Once the cake has cooled completely, carefully unlatch the springform pan and remove the cake. Slice it into generous portions and serve as desired, perhaps with a dusting of powdered sugar or a dollop of whipped cream.

Expert Tips for a Flawless Cherry Almond Cake

Achieving a perfect Cherry Almond Cake is easier than you think, especially with a few insider tips. These suggestions will help you ensure your cake is always moist, flavorful, and beautifully baked:

  • Always Line Your Pans: Beyond just greasing, I highly recommend lining the base of your cake tins with parchment paper. This simple step makes removing the cake from the tin significantly easier and completely eliminates the risk of the cake sticking.
  • Room Temperature Ingredients: For the best results, ensure your eggs and milk are at room temperature. This allows them to emulsify more effectively with the other ingredients, leading to a smoother batter and a more uniform cake texture.
  • Do Not Overmix: When combining the wet and dry ingredients, mix just until they are incorporated. Overmixing develops the gluten in the flour, which can result in a tough, dense cake. A few small lumps are perfectly acceptable.
  • Fresh Cherries are Key: While frozen cherries can be used (thawed and drained well), fresh cherries offer the best flavor and texture, bursting beautifully as they bake and releasing their natural juices.
  • Dairy-Free Adaptation: To make this cake dairy-free, simply replace the regular whole milk with an equal amount of your preferred dairy-free milk alternative, such as almond milk, soy milk, or oat milk.
  • Nut-Free Option: If you or your guests have a nut allergy, you can easily leave out the sliced almonds entirely. The cake will still be wonderfully delicious with its rich cherry flavor.
  • Proper Storage: Store any leftover cherry almond cake in an airtight container at room temperature. It will remain deliciously moist and fresh for up to 1 week.
  • Freezing is Not Recommended: While many cakes freeze well, I do not recommend freezing this particular cherry almond cake. The fresh cherries can become watery upon thawing, affecting the cake’s texture.
  • Cool Completely Before Slicing: Patience is a virtue when it comes to cake. Allow the cake to cool down completely on a wire rack before attempting to slice it. This allows the cake to set properly, preventing it from crumbling and ensuring clean, beautiful slices.

Delightful Serving Suggestions

This versatile Cherry Almond Cake is wonderful on its own, but it can also be dressed up to create an even more memorable experience. Here are some of my favorite ways to enjoy a slice:

  • Simple Pleasure: Enjoy a slice as it is, perhaps with your favorite cup of tea or freshly brewed coffee for a perfect afternoon treat or a pleasant breakfast.
  • Creamy Indulgence: Serve it alongside a generous dollop of freshly whipped cream, which adds a luxurious creaminess that complements the fruit and nut flavors beautifully.
  • Decadent Dessert: For an ultimate dessert experience, add a scoop of your favorite vanilla bean ice cream. The warmth of the cake with the cold, melting ice cream is simply divine.
  • Elegant Finish: A light dusting of powdered sugar just before serving adds a touch of elegance and an extra hint of sweetness.
  • Almond Drizzle: For an extra layer of almond flavor, whisk together powdered sugar with a splash of almond extract and a little milk to create a thin glaze, then drizzle it over the cooled cake.

Frequently Asked Questions About Cherry Almond Cake

Can I use frozen cherries for this cake?

Yes, you can use frozen cherries if fresh ones are not available. However, it’s crucial to thaw them completely and drain them very well to remove excess moisture. Pat them dry with paper towels before adding them to the cake batter to prevent the cake from becoming too wet or dense.

How do I easily pit fresh cherries?

Pitting cherries can be made easy with a few tools. A dedicated cherry pitter is the most efficient. Alternatively, you can use a pastry tip (the narrow end of a piping nozzle) or even a chopstick to push the pit out. Simply remove the stem, place the cherry on a cutting board, and push through the stem end until the pit pops out the other side.

Can I make this cake gluten-free?

Absolutely! As mentioned in the ingredients section, you can substitute the all-purpose flour with a 1:1 gluten-free baking flour blend, such as Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour. Ensure your chosen blend contains xanthan gum for optimal texture.

How long does cherry almond cake last?

When stored properly in an airtight container at room temperature, this cherry almond cake will stay fresh and delicious for 5 to 7 days. For best flavor and texture, I recommend enjoying it within the first few days.

Can I prepare the batter ahead of time?

While the cake is quick to prepare, it’s best to bake the batter immediately after mixing. Leavening agents (baking powder and baking soda) begin to react once wet ingredients are added, so for optimal rise and texture, bake without delay.
