  • 1 – 16 ounce tub of ricotta cheese, part-skim
  • 2 cups mozzarella cheese, shredded, divided
  • 1/2 cup Parmesan cheese
  • Fresh parsley and basil for garnish, chopped

Instructions

  • Preheat oven to 350 degrees F (175 C).
  • Fill a large pot with water and bring to a boil. Add 2 teaspoons of salt. Add the pasta to the water and boil until the pasta is al dente. Drain, drizzle olive oil over the pasta so it doesn’t stick together, and set aside in a large bowl.
  • In a large skillet, heat 2 Tablespoons olive oil over medium-high heat. Add the ground beef and cook until browned. Drain the fat and return the beef to the skillet. Add the minced garlic to the skillet along with the tomato sauce, Italian seasoning, salt, and pepper, and simmer for 10 minutes, stirring occasionally.
  • Pour the prepared meat sauce into the bowl with the cooked pasta and mix well until all the pasta is evenly coated.
  • In another medium bowl, mix together the ricotta cheese, cottage cheese, and 1 cup of mozzarella cheese until well combined.
  • To assemble the baked pasta, spread a thin layer of the pasta and sauce mixture on the bottom of a 9×13 inch baking dish. Then, pour half of the remaining pasta and sauce into the dish. Take spoonfuls of the ricotta mixture and evenly dollop them throughout this pasta layer. Repeat with the remaining pasta and sauce.
  • Sprinkle the leftover mozzarella cheese and Parmesan cheese generously over the top of the pasta. Bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden. Garnish with fresh parsley and basil before serving.
