  • 1 small Beet, peeled and diced
  • Salt and pepper, to taste
  • 2 tablespoons of olive oil
  • 1 teaspoon garlic powder

  • 1/8 teaspoon pepper

For the hummus:

  • 1 seasoned roasted beet
  • 1 can of chickpeas, drained and rinsed (15 ounce)
  • 2 tablespoons tahini
  • juice of 1 lemon, freshly squeezed
  • 1 to 2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Garnish with fresh herbs like parsley, thyme or oregano (optional)

Instructions

For the roasted beet:

  • Preheat the oven to 350 degrees Fahrenheit (175°C). In a mixing bowl, combine the peeled and diced beet, 2 tablespoons olive oil, garlic powder, onion powder, salt, and pepper. Toss well to ensure the beet pieces are evenly coated.
  • Spread the seasoned beets in a single, even layer on an oven-safe skillet, baking dish, or baking sheet. Avoid overcrowding for optimal roasting.
  • Bake in the preheated oven for 35 minutes, or until the beets are tender when pierced with a fork.
  • Remove from the oven and allow the roasted beets to cool down completely to room temperature before proceeding with the hummus.
