Ingredients
- 1 lb. farfalle pasta, or pasta of your choice
- 2 1/2 cups mozzarella, diced (or you can buy the pearls)
- 2 pints cherry tomatoes, quartered
- 1/2 cup Extra Virgin olive oil, divided
- 5 cloves garlic, skin removed, crushed
- 1/2 tsp. crushed red pepper flakes
- 4 Tbsp. fresh basil, chopped
- 1/3 cup Parmesan, grated
- Salt and freshly ground black pepper, to taste
Instructions
- In a large mixing bowl, gently toss the diced mozzarella and quartered cherry tomatoes with 1/4 cup of Extra Virgin olive oil. Cover the bowl and refrigerate while you prepare the other components. This allows the flavors to begin marrying.
- Cook your chosen pasta according to package directions until al dente. Ensure it’s firm to the bite, as it will soften slightly as it chills.
- While the pasta is cooking, heat the remaining 1/4 cup of olive oil in a large skillet over low heat. Add the crushed garlic cloves and crushed red pepper flakes.
