A serving of hearty Lentil Sausage Soup with a spoon

For years, my readers and I have shared a mutual love for delicious lentil soup recipes. Some of the earliest and most beloved recipes I’ve shared on A Cedar Spoon include my popular Moroccan Red Lentil Soup and its equally delightful counterpart, the Moroccan Carrot Red Lentil Soup. These have become staples in my home, cherished for their robust flavors and their fantastic suitability for meal preparation. I often prepare a double batch, enjoying half immediately and freezing the rest to ensure a quick and healthy meal is always on hand.

This Lentil Sausage Soup Recipe follows in that tradition, proving to be just as easy to make and equally perfect for meal prep. The addition of savory sausage elevates this soup, providing a depth of flavor that complements the earthy lentils beautifully. What truly sets this recipe apart, however, is its exquisite blend of warm spices: cumin, turmeric, paprika, and coriander create a symphony of aromas and tastes that I find utterly captivating. To enhance the experience, I love to garnish this soup with vibrant fresh herbs like mint and parsley, a pinch of crushed red pepper for a subtle kick, bright lemon slices, and a generous sprinkle of crumbled feta cheese.

If you’re a fan of lentil-based dishes, you might also enjoy exploring other recipes such as this comforting Red Lentil Curry, Lentil Mushroom Stew, or this flavorful Vegetarian Lentil Chili. Each offers a unique way to enjoy the versatility and nutritional benefits of lentils.

Essential Ingredients for Our Hearty Lentil Sausage Soup

All the fresh ingredients laid out for the Lentil Sausage Soup recipe

Gathering the right ingredients is the first step to a sensational soup. Here’s what you’ll need:

  • Aromatic Vegetables: The foundation of this soup’s flavor comes from a classic mirepoix of yellow onion, carrots, and celery, enhanced with the sweet crunch of red bell pepper. These vegetables are sautéed to create a fragrant and flavorful base.
  • Ground Sausage: I prefer using ground sausage meat, which brings a wonderful savory and often slightly spicy element to the soup. You can choose hot or mild sausage depending on your preferred level of heat. Italian sausage, whether sweet or spicy, also works wonderfully.
  • Warm Spices: The spice blend is truly the heart of this soup. A carefully balanced combination of earthy cumin, vibrant turmeric, smoky paprika, and aromatic coriander creates a rich, complex flavor profile. A touch of dried oregano further deepens these flavors, while Italian seasoning can be a lovely alternative or addition.
  • Rich Tomato Base: Both concentrated tomato paste and juicy canned diced tomatoes contribute to the soup’s robust body and tangy sweetness. Tomato paste adds a deep umami, while diced tomatoes provide texture and freshness. For a slightly thinner soup, you could substitute a small amount of tomato sauce for the paste.
  • Red Lentils: These tiny powerhouses are perfect for soup! Red lentils cook quickly and break down beautifully, giving the soup a naturally creamy texture without needing any dairy. Remember to rinse them thoroughly before use.
  • Flavor Enhancers: Dried oregano and bay leaves are crucial for adding an herbaceous, slightly peppery note that ties all the flavors together. Chicken broth forms the liquid base, but vegetable broth can be used for a vegetarian option.

Crafting Your Delicious Lentil Sausage Soup: A Step-by-Step Guide

Creating this flavorful soup is straightforward. Follow these simple steps for a perfect result:

Step 1: Prepare Your Lentils. Before you begin cooking, it’s important to properly prepare your red lentils. Carefully pick through them to remove any small pebbles or discolored lentils that might have snuck in. Once sorted, rinse the lentils thoroughly under cold running water. This step helps remove any dust or debris and ensures a clean, pure flavor for your soup. Set them aside while you prepare the other ingredients.

Step 2: Sauté the Aromatic Vegetables. Heat a generous amount of olive oil in a Dutch oven or a large, heavy-bottomed pot over medium-high heat. Add the minced garlic, diced yellow onion, chopped carrots, celery, and red bell pepper. Sauté these vegetables, stirring occasionally, until they begin to soften and become fragrant, which usually takes about 3-4 minutes. This step builds the foundational flavor of your soup.

Step 3: Brown the Sausage. Once the vegetables are tender, add the ground sausage to the pot. Break up the sausage with a spoon as it cooks, browning it evenly. Continue to cook until the sausage is fully cooked through and no longer pink. This browning process adds a rich, savory depth to the soup. After cooking, carefully drain any excess fat from the pot to keep the soup from being greasy, unless you prefer to keep some for extra flavor.

Step 4: Bloom the Spices. To unlock their full flavor and aroma, add the ground cumin, turmeric, paprika, coriander, and dried oregano to the pot with the sausage and vegetables. Continue to sauté for another 2 minutes, stirring constantly. This brief toasting process, often called “blooming” the spices, intensifies their flavors and integrates them seamlessly into the soup’s base.

Step 5: Simmer to Perfection. Now, it’s time to bring everything together. Stir in the tomato paste, chicken broth, diced tomatoes, the rinsed red lentils, and the bay leaves. Give everything a good stir to combine all the ingredients. Bring the mixture to a gentle simmer, then reduce the heat to low and let the soup cook uncovered for approximately 20 minutes. Stir occasionally to prevent the lentils from sticking to the bottom of the pot. Continue simmering until the lentils are beautifully tender and have absorbed much of the liquid, creating a rich and thick texture.

Once the lentils are tender and the soup has reached its desired consistency, remove it from the heat. Carefully ladle the warm, inviting soup into individual bowls. For a burst of freshness and color, garnish generously with fresh parsley and serve with bright lemon wedges on the side. A squeeze of fresh lemon juice just before eating truly brightens all the flavors.

Creative Ways to Customize Your Lentil Sausage Soup

One of the joys of cooking is making a recipe truly your own. This lentil sausage soup is incredibly versatile, allowing for many delicious modifications:

  • Lentil Variations: While red lentils are my preferred choice for their quick cooking time and creamy texture, you have other options. Yellow lentils also cook quickly and have a soft texture. If you opt for brown lentils or green lentils, be aware that they hold their shape better and require a longer cooking time to soften. Adjust simmering time accordingly until they reach your desired tenderness.
  • Sausage Choices: Feel free to experiment with different types of ground sausage to alter the flavor profile. Pork sausage, spicy Italian sausage for a kick, sweet Italian sausage for a milder, herb-infused taste, or leaner options like turkey sausage or chicken sausage all work wonderfully. Each will lend a unique character to the soup.
  • Boost the Veggies: This soup is a fantastic vehicle for adding more vegetables. Consider stirring in cauliflower florets, diced zucchini, sliced mushrooms, chunks of butternut squash, or sweet potatoes. If adding sweet potatoes or other root vegetables, dice them into small, even pieces to ensure they cook through at the same rate as the lentils.
  • Add Leafy Greens: For an extra dose of nutrients and vibrant color, stir in some leafy greens towards the end of the cooking process. Fresh spinach will wilt quickly, while chopped kale or Swiss chard can be added about 5-10 minutes before serving to soften slightly.
  • Turn up the Heat: If you enjoy a spicier soup, there are several ways to add a kick. Incorporate red pepper flakes when blooming the spices, or add finely diced red chili peppers or jalapeño peppers along with your other vegetables for a fresh heat.
  • Alternative Broths: While chicken broth provides a rich base, you can easily use vegetable broth for a vegetarian-friendly version of this soup (just omit the sausage or use a plant-based alternative).

Storage and Reheating Tips for Meal Prep Efficiency

This soup is a dream for meal preppers. Here’s how to store it effectively:

  • Refrigerator Storage: Leftover soup can be stored in an airtight container in the refrigerator for up to 3-5 days. Its flavors will often deepen and improve overnight!
  • Freezing for Later: For longer storage, allow the cooked soup to cool completely before transferring it to freezer-safe airtight containers or heavy-duty freezer bags. It can be stored in the freezer for up to 3 months. When you’re ready to enjoy, thaw the soup in the refrigerator overnight.
  • Reheating Instructions: Reheat the soup gently in a pot on the stove over medium-low heat, stirring occasionally, until it is piping hot all the way through. If the soup appears too thick after storage, you can add a splash of chicken or vegetable broth to reach your desired consistency.

Frequently Asked Questions About Lentil Sausage Soup

Do I need to rinse the lentils before using them?

Yes, it’s always recommended to rinse lentils thoroughly under cold running water before cooking. This helps remove any dust, debris, or small foreign objects that might be mixed in with the lentils. It also ensures a cleaner flavor for your soup.

Why did my lentils turn mushy?

Lentils can become mushy if they are overcooked. Red lentils, in particular, soften quite quickly. To prevent mushy lentils, pay close attention to the cooking time (about 20 minutes is usually sufficient for red lentils) and stir occasionally to ensure even cooking and prevent sticking to the bottom of the pot.

Can I make this soup vegetarian?

Absolutely! To make this soup vegetarian, simply omit the ground sausage and use vegetable broth instead of chicken broth. You can also add a plant-based sausage alternative or increase the amount of vegetables for added heartiness.

What can I serve with Lentil Sausage Soup?

This soup is hearty enough to be a meal on its own, but it pairs wonderfully with crusty bread, warm pita bread, a side salad, or a dollop of Greek yogurt or sour cream for added creaminess.
