Perhaps it’s my Wisconsin-born, cheese-loving husband’s influence, but my appreciation for a truly exceptional macaroni and cheese runs deep. This is the meal I would bring to my dear friend Ashley, from Center Cut Cook, if I still lived in Chicago. Their journey took an unexpected turn when they learned they were expecting their first child. Just one week later, they received devastating news: Ryan, a healthy 29-year-old, was diagnosed with Stage 4 Colon Cancer.
I had the privilege of meeting Ashley at a food blogging conference in Chicago when she was pregnant with their son, Miles. From the moment we met, I was struck by her positive, friendly, and warm demeanor. I truly enjoyed getting to know her and, through our conversations, learned about the immense challenges she and Ryan were facing. In the year that followed the conference, I continued to follow Ashley’s journey through her Facebook page, consistently inspired by her unwavering strength.
Ashley is one of the most resilient and positive women I know, enduring profound difficulties with remarkable grace. When their miracle baby, Miles, was born healthy and happy, he became Ryan’s incredible motivation to fight on. Miles brought a whole new level of joy and purpose to their lives, a beacon of hope amidst their struggles.

However, their family faced another heartbreaking challenge. When Miles was just eight weeks old, Ashley noticed him acting unusually while changing his diaper, suspecting a seizure. They rushed him to the hospital, where blood work confirmed that Miles, at only two months old, was in kidney failure. The seizure was a direct result of this critical condition.
After visits to three different hospitals and countless tests, the devastating diagnosis came: Miles has a rare disease called Primary Hyperoxaluria (Type 1), a condition that would necessitate a life-saving liver and kidney transplant. Their days are now consumed with managing Ryan’s bi-weekly chemotherapy treatments and providing around-the-clock care for Miles, who undergoes hemodialysis four days a week, peritoneal dialysis daily, and an overwhelming number of medications. Ashley’s incredible dedication to her family, and her enduring positivity in the face of such adversity, continue to touch my life daily. Her story serves as a profound reminder to cherish every moment and be thankful for the people you love.

Ingredients
- 16 oz. elbow macaroni, cooked and drained
- 2 Tablespoon olive oil
- 3 turkey sausage links, casing removed, crumbled
- 3 Tablespoons butter
- 1/4 cup milk, skim (or milk of your choice)
- 2 cups gouda cheese, shredded
- 2 cups parmesan cheese, freshly grated
- 2 cups sharp cheddar cheese, shredded
- 12 oz. roasted red peppers, liquid drained and chopped
- 6 oz fresh spinach, washed
- Salt and pepper, to taste
- Panko breadcrumbs (optional, for topping)
- Crispy onion straws (optional, for topping)
- Crushed red pepper flakes (optional, for garnish)
Instructions
- Prepare the elbow macaroni according to package directions until al dente. Drain well and set aside.
- In a large skillet, heat the 2 Tablespoons of olive oil over medium heat. Add the crumbled turkey sausage and cook, breaking it apart with a spoon, until it is browned and cooked through. Remove the sausage from the skillet and set aside in a bowl, leaving any rendered fat in the pan.
- In the same large skillet, melt the 3 Tablespoons of butter over medium heat. Pour in the 1/4 cup of skim milk (or milk of your choice) and add a dash of salt and pepper. Bring the mixture to a gentle boil, continuously whisking to combine the butter and milk. Gradually add in the shredded Gouda, Parmesan, and sharp cheddar cheeses, continuing to whisk until the cheese melts completely and the mixture becomes thick, smooth, and creamy.
- Add the chopped roasted red peppers, cooked turkey sausage, and fresh spinach to the cheese mixture. Stir gently until the spinach wilts down and all ingredients are evenly incorporated into the creamy cheese sauce.
- Finally, add the cooked and drained macaroni to the skillet with the cheese and vegetable mixture. Stir everything together until the pasta is thoroughly coated with the sauce and all ingredients are well combined. Taste the macaroni and cheese and adjust the salt and pepper as needed to suit your preference.
- Remove from heat and transfer to a large serving dish. Serve immediately with optional garnishes for added texture and flavor, such as crispy onion straws, panko breadcrumbs, or a sprinkle of crushed red pepper flakes for a little kick. Enjoy this comforting and satisfying meal!

- You could use smoked gouda instead of regular gouda if you prefer a deeper, smoky flavor profile for your mac and cheese.
- To make this dish vegetarian, you can easily eliminate the turkey sausage. In its place, feel free to add more fresh spinach, an extra portion of roasted red peppers, or even some sautéed mushrooms or zucchini for added vegetables. Alternatively, you can simply omit the sausage and enjoy the creamy, cheesy goodness as is.
