MEDITERRANEAN STEAK PITA WRAPS WITH MINT YOGURT SAUCE: A FRESH AND FLAVORFUL EXPERIENCE
It’s hard to believe it has been five months since we embraced a new chapter and moved to the vibrant Cleveland/Akron area in Ohio. Having ties to this region, where my extended family resides and where Mike and I exchanged vows, I was already quite familiar with its charm. However, I must admit, one of the aspects I genuinely mourned leaving behind in Chicago was its renowned food scene. Chicago, with its endless array of exceptional restaurants, bustling farmers markets, and overall culinary innovation, truly felt like a foodie’s paradise.
To my delightful surprise, Cleveland has proven to be a hidden gem in the gastronomic world. Many might raise an eyebrow at the thought of Cleveland boasting a vibrant food scene, but it genuinely does! From flourishing local farms and community-supported agriculture (CSAs) programs to vibrant farmers markets and an impressive roster of innovative restaurants, there’s a dynamic culinary movement happening here. The commitment to fresh, locally sourced ingredients is palpable and deeply inspiring.

One of the most remarkable discoveries since settling in Ohio is the sheer abundance of farms and the dedicated individuals and organizations that support them. This aspect of Ohio’s agricultural landscape is something I deeply admire. It fosters a strong connection between consumers and their food sources, ensuring freshness and sustainability. It’s truly a pleasure to partner with such an important organization, the Ohio Beef Council, to bring you this incredible recipe for Mediterranean Steak Pita Wraps with Mint Yogurt Sauce. These wraps are a testament to the quality of local ingredients and are perfectly suited for a light, fulfilling summer lunch or a hearty, crowd-pleasing dish for your Memorial Day BBQ. We often enjoy them during the warmer months, and the recipe can easily be doubled or tripled to accommodate a larger gathering.

Did you know that May is proudly celebrated as Ohio Beef Month? The Ohio Beef Council, in collaboration with the National Beef Council, invites you to participate in the 30-Day Protein Challenge. This initiative encourages individuals to incorporate protein into three meals a day for a full month, emphasizing the many health benefits of a protein-rich diet, such as sustained energy, muscle maintenance, and satiety. It’s an excellent way to boost your nutritional intake and explore delicious ways to prepare beef.
Ohio is home to an impressive 17,000 beef farming families, each deeply committed to upholding the highest standards of animal care, safeguarding the environment for future generations, and consistently producing safe, wholesome, and high-quality beef. Their dedication ensures that consumers can enjoy a nutritious and ethically sourced product. Ohioans collectively invest $4.1 billion annually in beef, recognizing it as a superior source of high-quality protein and essential nutrients. A modest 3-ounce serving of beef provides over 10 vital nutrients and half of your daily recommended protein intake, all for fewer than 150 calories. This makes beef an incredibly efficient and healthy protein choice for a balanced diet. To learn more about the passionate Ohio beef farmers and discover farms near you, visit www.OhioBeef.org.

One of my all-time favorite ways to enjoy a hearty and satisfying meal is through the convenience and flavor of pita wraps, especially when they feature succulent steak, as in these Mediterranean Steak Pita Wraps with Mint Yogurt Sauce. The combination of juicy, perfectly grilled steak with vibrant sauces is simply irresistible. I particularly love how the richness of the beef is enhanced by fresh, zesty complements. While this recipe features our homemade mint yogurt sauce, other favorites include a creamy dill sauce (like this Creamy Dill Sauce) or a classic, earthy Tahini Sauce.
For this specific recipe, the flank steak undergoes a transformative overnight marinade in a yogurt-based mixture. This step is crucial for two reasons: the natural enzymes in yogurt tenderize the meat beautifully, ensuring every bite is melt-in-your-mouth soft, and it infuses the steak with incredible flavor, preparing it for a quick grill.

Ingredients
For the Wraps:
- 1 lb. flank steak
- 2 large pita breads {or 4 small pitas}
- 1/4 cup lemon hummus
- 1/2 cup fresh tomato, diced
- 1/4 cup fresh parsley, stems removed, leaves chopped
- Hot sauce , {optional garnish}
For the Yogurt Marinade:
- 1 cup plain yogurt, low fat
- 1 Tablespoon honey
- 1 Tablespoon fresh mint, chopped
- 2 Tablespoons olive oil
For the Mint Yogurt Sauce:
- 1/4 cup plain yogurt, low fat
- 1/2 teaspoon honey
- 3 Tablespoons fresh mint, chopped
- Salt and pepper to taste
Instructions
-
Begin by preparing the flank steak. Place the steak on a large platter and season generously on each side with a pinch of salt and freshly cracked black pepper.
-
In a large resealable plastic bag, combine all the ingredients for the yogurt marinade: 1 cup plain yogurt, 1 tablespoon honey, 1 tablespoon chopped fresh mint, and 2 tablespoons olive oil. Place the seasoned flank steak into the bag and seal it tightly. Gently massage the bag to ensure the steak is fully coated with the marinade. Refrigerate the steak overnight for maximum tenderness and flavor, or for at least 2 hours if you’re short on time.
-
When you’re ready to assemble your pita wraps, preheat your grill for 5 minutes over high heat. Then, reduce the heat to medium. Carefully place the marinated flank steak on the preheated grill. Close the grill lid and allow the steak to cook for about 10 minutes.
-
Using tongs, flip the steak and continue to cook for another 5-10 minutes. The cooking time will vary depending on your desired doneness. For medium-rare, aim for an internal temperature of 130-135°F; for medium, target 135-140°F. Always use a meat thermometer for accuracy.
-
While the steak is cooking, prepare your pita breads. Lay your 2 large pitas (or 4 small pitas) flat on a large cutting board or serving platter. Evenly spread the lemon hummus on one side of each pita bread, creating a flavorful base. Set them aside.
-
Once the steak has reached your desired doneness, remove it from the grill. Transfer it to a clean cutting board and let it rest for a few minutes before slicing. This resting period allows the juices to redistribute, ensuring a tender and moist steak. Then, slice the steak into thin strips. Remember to always cut diagonally against the grain of the meat; this is crucial for achieving maximum tenderness in flank steak.
-
Assemble the wraps: Place half of the sliced steak on top of the lemon hummus spread on each pita. Drizzle generously with the prepared mint yogurt sauce. Finally, garnish with the fresh diced tomatoes and chopped parsley. For an extra kick, a dash of hot sauce can be added to your liking.
For the Mint Yogurt Sauce:
-
In a small bowl, combine 1/4 cup plain yogurt, 1/2 teaspoon honey, and 3 tablespoons chopped fresh mint. Season with salt and pepper to taste. Mix well and set aside until ready to use.
Notes
- This recipe is designed to yield enough steak for two substantial large pita wraps (as typically pictured) or four smaller pita wraps (which usually refers to the thicker, pocket-style pitas). Adjust quantities if you are feeding a larger crowd.
- For those who enjoy a little extra heat, I highly recommend adding a dash of your favorite hot sauce to the finished pita wrap. It really elevates the flavor profile!
- Consider making your own Lemon Hummus for an even fresher taste. It’s surprisingly easy and so much more flavorful.
- Instead of just fresh tomato and parsley, you can easily enhance these pita sandwiches by adding other Mediterranean staples. A scoop of homemade or store-bought tabbouleh would be a fantastic, flavor-packed addition, bringing in more herbs and a satisfying texture. Other great additions include thinly sliced red onion, crisp cucumber, crumbled feta cheese, or even some Kalamata olives for a salty kick. Feel free to customize with your favorite fresh Mediterranean ingredients!
- For meal prep, you can marinate the steak a day in advance and prepare the mint yogurt sauce. Store cooked steak separately and assemble the wraps fresh to prevent sogginess.
