Why the Instant Pot is Perfect for Chili Mac
The Instant Pot isn’t just a kitchen gadget; it’s a game-changer for dishes like Chili Mac. Its ability to combine multiple cooking functions into one pot means less cleanup and more flavor. Here’s why it’s my go-to for this recipe:
- Speed: Pressure cooking drastically reduces cooking time. What might take an hour or more on the stovetop comes together in a fraction of that, perfect for busy weeknights.
- One-Pot Wonder: You can sauté your meat and vegetables, then pressure cook the entire dish, all in the same pot. This saves you from a pile of dishes after dinner.
- Consistent Results: The sealed environment of the Instant Pot locks in moisture and flavors, ensuring your chili mac is consistently tender, rich, and perfectly cooked every time.
- Hands-Off Cooking: Once you set the timer, you’re free to attend to other tasks, making meal prep stress-free.

Essential Ingredients for a Flavorful Chili Mac
The magic of this Instant Pot Chili Mac lies in its carefully selected ingredients, each playing a crucial role in building its rich, complex flavor profile. For precise measurements and step-by-step instructions, please refer to the full recipe card below.
- Protein: We typically use ground beef (80/20) for its rich flavor and satisfying texture. However, for a leaner option, ground turkey works wonderfully and still provides a robust base.
- Aromatic Vegetables: A classic trio of red onion, garlic, and bell pepper forms the flavor foundation. The red onion offers a slight sweetness, while minced garlic provides a pungent kick. Bell peppers (any color) add fresh crispness and a hint of sweetness.
- Optional Heat: A diced jalapeño is included for those who enjoy a touch of spice. If you prefer a milder chili, feel free to omit it. For more heat, you can leave some of the seeds in or add an extra jalapeño.
- Rich Broth: Beef stock is preferred for its deep, umami flavor that complements the ground beef. Chicken stock can be used as a substitute if that’s what you have on hand.
- Tomato Base: Crushed tomatoes provide the essential tangy and slightly sweet tomato base that is characteristic of good chili. Alternatively, tomato sauce can be used.
- Hearty Beans: Kidney beans are a staple in many chili recipes, offering a creamy texture and earthy flavor. Feel free to substitute with black beans, pinto beans, or any other bean variety you prefer. Ensure they are drained and rinsed.
- Signature Spices: A powerful blend of chili powder, cumin, paprika, and oregano creates the signature warm, earthy, and slightly smoky flavor that defines this chili. These spices are key to a well-rounded taste.
- Secret Ingredient: A touch of cocoa powder might seem unconventional, but it’s a game-changer! It doesn’t make the chili taste like chocolate; instead, it deepens the color and adds an incredible richness and complexity to the overall flavor, making it truly stand out.
- The “Mac” Element: Small pasta shapes are best for chili mac. Elbow macaroni is the traditional choice, soaking up the chili flavors beautifully and creating that classic comforting texture. Whole grain macaroni can be used for a healthier twist.
- Creamy Finish: Freshly shredded sharp cheddar cheese is stirred in at the end, melting into the chili to create a luscious, cheesy sauce that binds everything together. It’s what makes this a truly cheesy chili mac everyone will adore.
- Fresh Garnish (Optional): Fresh cilantro adds a bright, herbaceous finish that cuts through the richness of the chili mac.

Step-by-Step Guide to Making Instant Pot Chili Mac
Creating this delicious Instant Pot Chili Mac is straightforward and efficient. Follow these detailed steps for a perfect, hearty meal:
- Prepare the Meat (Sauté Mode): Begin by setting your Instant Pot to the “Sauté” mode and wait until it indicates “HOT.” Add 2 tablespoons of olive oil. After about 30 seconds, add your chosen ground meat (beef or turkey). Break it apart with a spoon and cook until it is thoroughly browned. Once cooked, drain any excess fat to prevent a greasy chili and set the meat aside in a separate bowl.
- Sauté Aromatics and Vegetables: Add another 1 tablespoon of olive oil to the Instant Pot. Introduce the minced garlic and diced red onion, sautéing for 1-2 minutes until fragrant. Next, add the diced bell pepper and the optional diced jalapeño. Continue to sauté for an additional 4-5 minutes, allowing the bell pepper to soften slightly.
- Deglaze for Maximum Flavor: Return the browned ground meat to the Instant Pot. Pour in 1/2 cup of beef or chicken broth. Using a wooden spoon or spatula, carefully scrape the bottom of the pot to loosen any browned bits of food. This crucial step, known as deglazing, not only adds incredible depth of flavor but also prevents the “burn” warning during the pressure cooking cycle.
- Combine Remaining Ingredients: Add the remaining beef or chicken broth, drained and rinsed kidney beans, crushed tomatoes, all the spices (chili powder, cumin, paprika, oregano, and optional cayenne pepper), and the cocoa powder. Stir everything together gently to combine. Finally, add the elbow macaroni pasta, pushing it down slightly into the liquid but avoid stirring it too vigorously at this point, as it can sometimes lead to pasta clumping. Cancel the “Sauté” mode.
- Pressure Cook to Perfection: Secure the pressure cooker lid, ensuring it’s properly sealed. Rotate the steam release knob to the “Sealing” position. Set your Instant Pot to “Manual High” (or “Pressure Cook High” depending on your model) for 4 minutes. The pot will take some time to come to pressure before the cooking countdown begins.
- Quick Release and Finish: Once the Instant Pot beeps, signaling that cooking is complete, perform a quick release. This means carefully turning the steam release knob to the “Venting” position to rapidly release the pressure. Once all the pressure has been released and the float valve drops, turn off the Instant Pot. Carefully remove the lid, tilting it away from your face to avoid any residual steam.
- Add Cheese and Serve: Stir the chili mac thoroughly to combine all the ingredients. Add the shredded cheddar cheese and fresh cilantro (if using) to the hot pasta mixture. Stir until the cheese is completely melted and creamy, creating a luxurious, cohesive sauce. Serve your Instant Pot Chili Mac immediately in bowls, inviting everyone to load on their favorite garnishes!

Customizing Your Chili Mac: Endless Variations and Topping Ideas
One of the best things about Chili Mac is its versatility. You can easily adapt this recipe to suit different dietary preferences, spice levels, or simply to use what you have on hand. Don’t be afraid to get creative!
- Vegetarian or Vegan Adaptations: For a delicious meat-free version, simply omit the ground beef or turkey. You can bulk up the chili with additional vegetables like diced carrots or zucchini, extra beans (black, pinto, cannellini), or even plant-based ground meat alternatives. For a vegan chili mac, ensure you use a dairy-free cheese alternative. Chopped mushrooms can also add a wonderful earthy texture.
- Boost Your Veggies: Love your vegetables? This chili mac is an excellent canvas for them! Consider adding finely diced carrots, celery, corn, poblanos for a milder pepper flavor, or even zucchini. Sauté them alongside the bell peppers and onions to ensure they soften nicely.
- Adjust the Spice Level: This recipe is intentionally crafted to be family-friendly, with a mild heat profile. If you enjoy a kick, feel free to increase the amount of jalapeño, add a pinch or two of cayenne red pepper, or include a dash of your favorite hot sauce at the end. For those who prefer no heat at all, simply omit the jalapeño.
- Bean Varieties: While kidney beans are traditional, feel free to use any type of beans you have in your pantry. Black beans or pinto beans are fantastic additions, offering slightly different textures and flavors that complement the chili beautifully.
- Pasta Alternatives: If elbow macaroni isn’t available, other small pasta shapes like ditalini, small shells, or rotini can work well. Just ensure they are small enough to cook evenly in the Instant Pot within the given time.
- Gluten-Free Option: To make this recipe gluten-free, simply swap the traditional elbow macaroni for your favorite gluten-free pasta. Ensure all other ingredients are also certified gluten-free.
Serving Suggestions & Topping Ideas
Elevate your Instant Pot Chili Mac experience with a variety of delicious toppings and accompaniments:
- Classic Toppings: Shredded cheddar cheese, a dollop of sour cream or Greek yogurt, chopped green onions, and fresh cilantro are always winners.
- For Extra Crunch: Crushed tortilla chips, Fritos, or oyster crackers add a satisfying textural contrast.
- Vegetable Boost: Diced avocado, extra diced raw onion, or a side of cornbread provide fresh flavors and balance.
- Heat Seekers: A drizzle of your favorite hot sauce, extra jalapeño slices, or a sprinkle of red pepper flakes.
- Beyond the Bowl: Serve over baked potatoes or even as a hearty filling for quesadillas!

Storage Tips & Freezing Instructions
This Instant Pot Chili Mac recipe yields a generous batch, making it perfect for leftovers or meal prep. Proper storage ensures you can enjoy its comforting flavors for days to come:
- Refrigeration: Store any leftover chili mac in an airtight container in the refrigerator for up to 4 days. When reheating, you might want to add a splash of broth or water to loosen it up, as the pasta can absorb more liquid as it sits. Reheat gently on the stovetop or in the microwave until warmed through.
- Freezing: This recipe freezes beautifully, making it an excellent option for future meals. Ensure the chili mac is completely cooled before transferring it to freezer-safe airtight containers or heavy-duty freezer bags. It can be stored in the freezer for up to 3 months.
- Reheating from Frozen: Thaw the frozen chili mac in the refrigerator overnight. Reheat it on the stovetop over medium-low heat, stirring occasionally, or in the microwave. Keep in mind that the pasta’s texture might be slightly softer after freezing and reheating, but the flavor will remain delicious. If it appears too thick, add a little extra broth or water to reach your desired consistency.
Frequently Asked Questions (FAQs)
Can I use different ground meat?
Absolutely! Ground beef (80/20 or leaner) and ground turkey are excellent choices. You could also experiment with ground chicken or even a plant-based ground meat substitute for a vegetarian option.
My chili mac is too thin/thick. How can I fix it?
If it’s too thin, you can simmer it longer on sauté mode after pressure cooking to reduce the liquid, or stir in a tablespoon of cornstarch mixed with a little cold water to thicken it. If it’s too thick, simply add a splash more beef or chicken broth until it reaches your desired consistency.
Can I add cheese directly to the Instant Pot before pressure cooking?
It’s best to add the cheese after the pressure cooking phase. Dairy products can sometimes curdle or separate under high pressure, and adding it at the end ensures a smooth, creamy, and perfectly melted result.
How do I prevent the “burn” notice on my Instant Pot?
The key steps are proper deglazing (scraping all browned bits from the bottom of the pot after sautéing) and ensuring that the pasta and crushed tomatoes are not directly sitting on the bottom of the pot when you add them. A quick stir after adding the liquid, then layering pasta on top without stirring, can help.

- 1 Tablespoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/4 teaspoon cayenne pepper, {optional for spice}
- 2 Tablespoons cocoa powder
- 1 can kidney beans, drained and rinsed
- 1 can crushed tomatoes, or tomato sauce
- 2 cups elbow macaroni pasta, {whole grain for healthier chili mac}
- 2 cups cheddar cheese, sharp
- 1/4 cup fresh cilantro, {optional}
Instructions

Set your Instant Pot to sauté and wait until it shows HOT. Add 2 Tablespoons olive oil and after 30 seconds add the ground beef or turkey. Cook until the meat is browned. Drain the meat and set aside.
-
Add another 1 Tablespoon olive oil and add the garlic, onion and sauté for 1 -2 minutes. Add the bell pepper and jalapeño (optional) and sauté for another 4-5 minutes until the bell pepper is tender.
-
Add the ground beef back in and 1/2 a cup of beef or chicken broth. Use your spoon to deglaze the Instant Pot, making sure to scrape away all of the browned bits of food. This helps to ensure that your food doesn’t burn during the pressure cooking phase.

Add the remaining beef or chicken broth, kidney beans, crushed tomatoes, spices, cocoa powder, and pasta. Stir gently. Cancel the sauté mode.
-
Put the pressure cooker lid on and set the steam release knob to the sealed position.

Notes
- You can adjust the spice level by adding or omitting the jalapeño. For more heat, consider adding a pinch of crushed red pepper flakes.
- If the chili mac is not thick enough for your liking after cooking, you can stir in a tablespoon of tomato paste or a cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp cold water) and simmer on sauté mode for a minute or two until thickened.
