Tropical Chicken Salad

Tropical Chicken Salad is light and healthy and full of your favorite tropical flavors.

Ingredients
For the dressing:
- 3/4 cup plain Greek yogurt
- 1 Tablespoon honey (more to taste)
- 1 lime, juiced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne red pepper (optional)
For the chicken salad:
- 3 cups shredded chicken (about 1 1/2 pounds)
- 1 1/2 cup pineapple, diced
- 1 cup Bee Sweet Citrus – Mandarins, peeled, sliced in half
- 1/2 cup SunMaid raisins
- 1 1/2 cups Sun World® Grapes, sliced in half
- 1/4 cup pecans or slivered almonds (optional)
- 1 carrot, thinly sliced
- 2 green onions, green parts chopped
- 1/4 cup fresh parsley or cilantro, chopped
- 1/4 cup coconut, shredded (optional)
Instructions
- In a large medium bowl, combine the Greek yogurt, honey, lime juice, salt, pepper, garlic powder, and cayenne red pepper (if using). Stir well until smooth. Set aside.
- In a large mixing bowl, combine the shredded chicken, diced pineapple, halved mandarins, raisins, halved grapes, nuts (if using), thinly sliced carrots, chopped green onions, fresh parsley or cilantro, and shredded coconut (if using). Gently stir to combine all ingredients.
- Pour the prepared Greek yogurt dressing over the chicken salad mixture. Stir until all ingredients are evenly coated in the creamy dressing.
- Serve immediately on crisp lettuce wraps, as a filling for sandwiches or rolls, or simply enjoy it on its own as a refreshing salad.
