  • 2 mandarins, peeled and separated into segments
  • 1 small bunch of fresh greens (spinach recommended, or substitute arugula or kale), washed, trimmed, and chopped
  • 1 large bell pepper, diced (use a mixture of red, yellow, and orange for best color)
  • 1/2 cup sunflower seeds
  • 1/2 cup dried cranberries
  • Zest of half a lemon (for garnish and aroma)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped

  4. Pour about half of the prepared dressing over the pasta salad. Gently toss to ensure all ingredients are lightly coated. Taste and add more dressing if desired, keeping in mind the salad will absorb some as it chills.
  5. Finally, sprinkle the remaining fresh parsley, mint, and lemon zest over the salad. Stir once more. Taste and adjust seasonings, adding salt and freshly ground black pepper to your preference.
