    cups
    vegetable stock
  • 2
    lbs.
    butternut squash,
    seeds removed, peeled and cubed
  • 2
    apples,
    of your choice {peeled, cored, and diced} – a sweeter apple is recommended
  • 1/2
    sweet onion,
    chopped

    teaspoon
    nutmeg

Instructions

  1. Combine Ingredients: Place all ingredients into your slow cooker, with the exception of the coconut milk and any garnishes.
  2. Cook: Cover and cook on HIGH for 3-4 hours, or on LOW for 5-6 hours, until the butternut squash and apples are very tender.
  3. Add Creaminess: Once cooking is complete, stir in the coconut milk until well combined.
  4. Blend: Using an immersion blender directly in the pot, or carefully transferring in batches to a regular blender, blend the soup to your desired consistency – from chunky to perfectly smooth.
  5. Serve & Garnish: Ladle into bowls and garnish with fresh diced apples and chopped parsley. Add crushed red pepper flakes if you prefer a spicier soup.

  • You can use any apple variety you like. I tend to prefer sweeter apples for a more harmonious blend with the squash.
  • Feel free to omit the cayenne pepper and crushed red pepper entirely if you or your family prefer a milder soup.
  • For a different flavor profile or if you don’t have coconut milk, you can use heavy cream or milk in its place. For the creamiest texture, stick with full-fat coconut milk or heavy cream.
