Essential Ingredients for Your Soup

You’ll appreciate how this recipe uses simple, accessible ingredients that come together to create complex, authentic Mexican-inspired flavors. Each component plays a crucial role in building the soup’s depth and character.
- Chicken: We recommend boneless, skinless chicken breasts for their lean protein and ease of shredding. However, boneless, skinless chicken thighs can also be used for a slightly richer flavor. The Instant Pot cooks them perfectly, making them incredibly tender.
- Beans: Black beans are a classic choice for tortilla soup, adding fiber and a creamy texture. Feel free to experiment with pinto beans or a combination of both if you prefer. Always remember to drain and rinse canned beans to remove excess sodium.
- Vegetables: This soup is vibrant with diced tomatoes (fire-roasted varieties add an extra layer of smoky flavor!), sweet corn, fragrant garlic, and red onion. But don’t stop there! Consider adding other vegetables like finely diced bell peppers, zucchini, or poblano peppers for more depth and nutritional value. Fresh cilantro and green onions, added at the end, brighten the entire dish.
- Spices: The heart of any great Mexican soup lies in its spices. Chili powder, cumin, paprika, and Mexican oregano are fundamental, providing a warm, earthy, and aromatic base. A touch of cayenne pepper is optional but highly recommended if you enjoy a little heat.
- Chicken Broth: Opt for a good quality chicken broth or stock, as it forms the liquid base of your soup and significantly impacts the overall flavor. Low-sodium options are great, allowing you to control the salt content.
- Lime Juice: Freshly squeezed lime juice is a non-negotiable finishing touch. It brightens all the flavors, adds a necessary zing, and cuts through the richness of the soup.
Recipe Modifications for Every Palate
One of the beauties of Instant Pot Chicken Tortilla Soup is its adaptability. You can easily adjust the ingredients to suit your dietary preferences, spice tolerance, or what you simply have on hand.
- Add Grains: For an even heartier meal, incorporate grains directly into your Instant Pot. Brown rice, white rice, or even quinoa can be added along with the broth (adjusting liquid ratios as needed) to cook simultaneously with the soup, absorbing all those delicious flavors.
- Boost the Vegetables: The more vegetables, the merrier! Beyond the core ingredients, consider adding diced carrots, celery, bell peppers (red, green, or yellow), or even small pieces of butternut squash for extra nutrients and sweetness. Sautéing these with the onion and garlic at the beginning can enhance their flavor.
- Adjust the Spice Level: If you love a fiery kick, increase the cayenne pepper or add a diced jalapeño or serrano pepper when you sauté the onions. For a smoky heat, a dash of chipotle powder or a spoonful of adobo sauce from canned chipotles can work wonders. If you prefer it milder, simply reduce or omit the cayenne.
- Creamy Texture: For a richer, creamier soup, stir in a dollop of cream cheese or a splash of heavy cream at the very end, after the pressure cooking is complete and the chicken has been shredded.
- Vegetarian/Vegan Option: To make this soup meat-free, simply omit the chicken and use vegetable broth. You can compensate for protein by adding an extra can of beans, lentils, or even plant-based chicken strips. Ensure all other ingredients are plant-based.

Storage and Meal Prep Tips
This Instant Pot Chicken Tortilla Soup is perfect for making ahead and enjoying throughout the week or freezing for later. Thoughtful storage ensures you have delicious, homemade meals ready when you need them.
- Refrigeration: Store any leftover soup in an airtight container in the refrigerator for up to 5-7 days. To reheat, gently warm on the stovetop over medium heat until heated through, or microwave in individual portions. Add a splash of broth if it seems too thick.
- Freezing: This soup freezes exceptionally well! Once the soup has cooled completely, transfer it to freezer-safe containers or heavy-duty freezer bags. Be sure to leave a little headspace if using containers, as liquids expand when frozen. It can be stored in the freezer for up to 3 months. When ready to enjoy, thaw overnight in the refrigerator, then reheat as described above. This makes it an excellent option for healthy, homemade meal prep.

Instant Pot Chicken Tortilla Soup Recipe
By Julia Jolliff
Instant Pot Chicken Tortilla Soup is a zesty soup that will complement your next taco night or makes a meal on its own.

Prep Time: 15 mins | Cook Time: 30 mins | Total Time: 45 mins | Servings: 6 servings
Ingredients
- 5 cups chicken broth
- 3 cloves garlic, minced
- 1/2 red onion, diced
- 1.5 pounds boneless, skinless chicken breasts
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional for spice)
- 1 teaspoon Mexican oregano, or regular oregano
- 1 can diced tomatoes (you can also use fire-roasted)
- 1 can diced chiles
- 2 cups frozen corn
- 1 can black beans, drained, rinsed
- 1 lime, juiced
- 1/4 cup cilantro, chopped
Instructions
- Place the broth, minced garlic, and diced red onion in the Instant Pot.
- Carefully place the chicken breasts on top of the liquid ingredients.
- Evenly sprinkle all the spices (chili powder, cumin, paprika, cayenne pepper if using, and Mexican oregano) over the chicken breasts.
- Next, add the diced tomatoes, diced green chiles, frozen corn, and drained and rinsed black beans to the pot. Do not stir.
- Secure the lid on the Instant Pot and ensure the sealing valve is in the “Sealing” position.
- Cook on MANUAL (or Pressure Cook) HIGH pressure for 5 minutes.
- Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes (Natural Release). This helps tenderize the chicken further.
- After 10 minutes of natural release, carefully turn the sealing valve to the “Venting” position for a Quick Release to release any remaining pressure.
- Once the float valve has dropped and the pot is depressurized, remove the lid carefully, opening it away from your face.
- Remove the cooked chicken breasts and place them on a cutting board. Use two forks to shred the chicken, then return the shredded chicken to the pot.
- Stir all the ingredients in the pot together until well combined.
- Add the freshly squeezed lime juice and chopped cilantro, then stir again.
- Taste the soup and adjust seasonings as needed, adding salt and pepper to your preference.
- Ladle the hot soup into bowls and garnish generously with your favorite toppings such as shredded cheese, tortilla strips, extra cilantro, red onion, jalapeños, and avocado.
Notes
- It’s important to remember that the Instant Pot takes some time to build pressure before the actual 5-minute cook time begins. Factor this heating time, along with the 10 minutes of natural release and the subsequent quick release, into your total cooking estimation. Typically, this recipe takes about 25-30 minutes from start to finish.
- Always adjust seasonings to your personal preference. I recommend starting with the quantities listed and then tasting the soup at the end of cooking to add more salt, pepper, or other spices as desired.
- For an even deeper flavor profile, you can use the “Sauté” function of your Instant Pot at the beginning. Sauté the diced red onion and minced garlic in a tablespoon of olive oil for about 3-5 minutes until softened. Then, add the spices and sauté for another minute until fragrant. After sautéing, add about 1/2 cup of chicken broth to deglaze the bottom of the pot, scraping up any browned bits, which prevents a “Burn” notice. Then proceed with adding the remaining ingredients as per the instructions.
