Ingredients
- 2 Tablespoons olive oil
- 1/2 medium sweet onion, chopped
- 3 chopped garlic cloves, minced
- 2 cups carrots, peeled and chopped
- 1 1/2 teaspoons cumin
- 1 teaspoon turmeric
- 2 teaspoon coriander
- 1 teaspoon paprika
- 1/4 teaspoon cinnamon
- 1/2 teaspoon crushed red pepper (optional)
- 2 cups red lentils, rinsed until water runs clear
- 1 can diced tomatoes
- 5 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro (for garnish)
- Dollop of yogurt (for garnish, optional for vegan)

Instructions
- Add 2 Tablespoons of olive oil to your Instant Pot. Turn the Instant Pot to the “Sauté” function. Add the chopped onion and garlic and sauté for about 2 minutes until fragrant.
- Add the carrots and all the spices (cumin, turmeric, coriander, paprika, cinnamon, and optional crushed red pepper) and continue to sauté for another 4 minutes, or until the carrots start to become tender. Add a splash of broth and stir to deglaze the bottom of the Instant Pot, scraping up any browned bits. Turn off the “Sauté” function.
- Add in the rinsed red lentils and give it a good stir. Add the diced tomatoes on top, but do not stir them into the lentils. Close the lid and ensure the vent is sealed.
- Set the Instant Pot to “MANUAL” or “PRESSURE COOK” on HIGH pressure for 3 minutes. (Remember it will take some time for the Instant Pot to come to pressure.)
- Once the pressure cooking cycle is complete, perform a quick release by turning the knob to “Venting”. Wait for all of the pressure to be released and the floating pin to drop. Turn off the pressure cooker and carefully remove the lid, lifting it away from you.
- Use a handheld immersion blender to puree the soup to your desired consistency, or leave it chunky for a heartier texture. Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh cilantro, a dollop of yogurt (if desired), and crushed red pepper.
