  • 1 Boston lettuce , {Bibb lettuce is also great}
  • 2 Tablespoons olive oil
  • 1 pound ground turkey, cooked
  • 1/4 sweet onion, chopped

  • 1/2 red pepper, {or any bell pepper of your choice}, diced
  • 1 – 15 oz can black beans, drained and rinsed
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes , {cayenne pepper works too; adjust to desired spiciness}
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup fresh cilantro, chopped
  • 3 green onions, chopped
  • Salsa of your choice
  • Shredded Cheese
  • Sour cream , or Greek yogurt
  • Fresh jalapeños, chopped (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the ground turkey and cook until thoroughly browned, typically about 4-5 minutes. As it cooks, use a spoon or spatula to crumble the turkey into small pieces.
