Ingredients

  • 1 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons red onion, minced
  • 2 tablespoons roasted red peppers, finely chopped
  • 4 eggs, beaten
  • 1/2 cup of fresh spinach, chopped
  • 2 tablespoons feta cheese, crumbled
  • 1/4 cup of quinoa or grain of your choice, optional
  • 1/2 teaspoon za’atar or Greek seasoning of your choice
