- 2 large carrots, chopped into rounds (or 2 cups matchstick carrots, or spiralized if large enough)
- 1/2 red onion, spiralized (outer peel removed)
- 1 jalapeño, seeds removed, thinly sliced (optional, for spice)
- 2 Tablespoons rice vinegar
- 1 teaspoon sugar
- 1 teaspoon Thai chili garlic sauce (adjust for desired spice level)
