Ingredients


  • 1 lb. lean ground turkey

  • 1 small sweet onion, diced

  • 1 bell pepper, seeded, diced

  • 4 cloves garlic, minced

  • 1 jalapeño, seeds removed, chopped {optional for spice}

  • 1 1/2 Tablespoons chili powder

  • 1 1/2 Tablespoons cumin

  • 1/2 teaspoon paprika

  • 1/2 teaspoon cayenne pepper , {optional for spice}

  • 2 teaspoons dried oregano

  • 2 Tablespoons tomato paste

  • 2 cans diced tomatoes, drained

  • 15 oz. low-sodium black beans, drained, rinsed

  • 15 oz. corn, drained, no salt added

  • 1 cup low-sodium chicken broth

  • 4 cups baby kale

  • 2 Greek yogurt (for garnish)

  • Unsalted tortilla chips, crushed (for garnish)

  • Cilantro (fresh, chopped, for garnish)

  • Red onion, Diced (for garnish)

  • Shredded Cheese (for garnish)

Instructions


  • Brown the lean ground turkey in a large skillet over medium-high heat until fully cooked. Drain any excess fat. Transfer the browned turkey to your slow cooker. Add the diced sweet onion, bell pepper, minced garlic, and chopped jalapeño (if using for a touch of spice). Stir in the chili powder, cumin, paprika, cayenne pepper (if desired), dried oregano, and tomato paste. Finally, add the drained diced tomatoes, rinsed black beans, drained corn, and low-sodium chicken broth. Stir all ingredients thoroughly to combine. Cook on low for 5 hours.

  • After 4 1/2 hours of cooking, carefully open the slow cooker and add the 4 cups of baby kale. Stir the kale into the chili until it is mostly submerged. The heat from the chili will quickly wilt the kale. Cover and continue to cook for an additional 30 minutes, or until the kale is tender and fully incorporated.

  • Ladle the hot chili into individual bowls. Garnish generously with your favorite toppings such as Greek yogurt (or sour cream), crushed unsalted tortilla chips, fresh cilantro, diced red onion, and shredded cheese. Serve immediately and enjoy your comforting, healthy meal!

Notes

  • Protein Options: Feel free to customize this chili with your preferred protein. Ground chicken, lean ground beef, or even a combination would work wonderfully. For a vegetarian option, simply omit the turkey and add an extra can of beans or more vegetables.
  • Greens Swap: If kale isn’t your favorite, or if you have other greens on hand, spinach, Swiss chard, or collard greens can be substituted. Add them towards the end of the cooking process just like the kale.
  • Bean Varieties: Experiment with different types of beans! Kidney beans, cannellini beans, or pinto beans would all make excellent additions or substitutions for the black beans.
  • Freezing for Later: This chili freezes beautifully. Once cooled completely, transfer leftovers to airtight, freezer-safe containers or bags. It can be stored in the freezer for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave.
  • Spice Level: Adjust the amount of jalapeño and cayenne pepper to control the heat level. For a milder chili, omit them entirely. For extra kick, add another jalapeño or a pinch more cayenne.
