Ingredients

  • 1/2 cup cooked brown rice, (or rice of your choice)
  • 2 Tablespoons olive oil
  • 1 cup sweet onion, chopped (about 1/2 of a medium onion)
  • 2 garlic , minced
  • 1 pound ground pork
  • 1 lime, juiced
  • 3 Tablespoons soy sauce, low sodium
  • 2 teaspoons red chili garlic sauce, (I use Huy Fong Chili Garlic Sauce), more or less for spiciness
  • 1 teaspoon chili paste
  • 2 Tablespoons fresh ginger, peeled and grated
  • 1 cup cilantro, chopped (plus extra for garnish)
  • 3 green onions, green part chopped
  • Salt and pepper to taste
  • 1 Boston Lettuce, washed and separated (or bibb lettuce)
  • fresh cilantro, Extra, for garnish
  • Unsalted peanuts, optional, for garnish
  • carrots, cut into Matchsticks, for garnish

Instructions

  • 1. Cook the rice according to the package directions. Set aside.
  • 2. While the rice cooks, heat 2 Tablespoons of olive oil in a large skillet over medium heat. Add the chopped sweet onion and sauté for 2 minutes until it starts to soften. Add the minced garlic and continue to sauté for another 2 minutes until fragrant.
  • 3. Add the ground pork to the skillet. Break it up with a spoon and cook until fully browned, about 5-7 minutes. Drain any excess fat if necessary.
  • 4. Stir in the fresh lime juice, low-sodium soy sauce, red chili garlic sauce, chili paste, and grated fresh ginger. Cook for another 2-3 minutes, allowing the flavors to meld together and the sauce to slightly thicken.
  • 5. Remove the skillet from heat. Mix the cooked rice (if using) into the pork mixture, along with the chopped fresh cilantro and green onions. Stir well to combine all ingredients. Season with salt and freshly ground black pepper to taste.
