Essential Ingredients for Instant Pot Chicken and Potatoes
Crafting this succulent Instant Pot chicken and potato dish requires a few simple, high-quality ingredients. Here’s what you’ll need, along with some insights into why each element is crucial and potential substitutions:
- CHICKEN: For optimal results, I highly recommend using fresh, boneless, skinless chicken breasts. Their consistent thickness allows for even cooking and they absorb flavors beautifully. While the recipe uses 3-4 small chicken breasts (approximately 1 pound), you can adjust the quantity based on your serving needs, keeping in mind cooking times might vary slightly for much larger or thicker pieces.
- OLIVE OIL: A good quality olive oil is my preferred choice for searing the chicken, adding a subtle richness. However, feel free to use any cooking oil you favor, such as avocado oil or vegetable oil.
- POTATOES: The key to truly creamy mashed potatoes lies in selecting the right variety. I consistently reach for Yukon Gold potatoes because of their naturally buttery flavor and velvety texture when mashed. Their lower starch content compared to some other varieties means they break down beautifully without becoming gummy. Russet potatoes are another excellent choice for mashing, or you can use any other potato type known for producing smooth, fluffy mashed potatoes. Remember to peel and quarter them for even cooking in the Instant Pot.
- BUTTER: Butter is non-negotiable for incredible flavor and richness! I use salted butter for both searing and mashing the potatoes. If you prefer unsalted butter, that works too – just be sure to taste and adjust the seasoning (salt) accordingly after mashing. The butter contributes significantly to the luxurious texture of the potatoes.
- HERBS: Fresh sage leaves bring a wonderful earthy, slightly peppery aroma to the potatoes, pairing exquisitely with garlic. I also include two minced garlic cloves, which impart a robust, savory depth. If fresh sage isn’t available, or if you wish to explore different flavor profiles, fresh thyme or rosemary make excellent substitutes. Finely chop them to ensure their flavors meld perfectly with the potatoes.
- CREAM: To achieve that ultimate creamy consistency and rich flavor in the mashed potatoes, I use a combination of heavy cream and sour cream. The heavy cream adds an unparalleled silky smoothness, while the sour cream introduces a delightful tanginess that balances the richness beautifully. For a slightly lighter version, you can substitute milk, light cream, or even low-fat crème fraîche, but be aware that the final texture and richness of the potatoes will be slightly different.

Step-by-Step: How to Make My Instant Pot Chicken Breast and Mashed Potatoes
Preparing this comforting meal in your Instant Pot is incredibly straightforward. Follow these simple steps for a perfect dinner every time:
1. Sauté the Chicken for Enhanced Flavor
Begin by setting your Instant Pot to the “Sauté-Normal” function. This will heat the inner pot, preparing it for searing. While the pot heats, lightly season your boneless, skinless chicken breasts on both sides with salt and freshly ground black pepper. Once the Instant Pot is hot, add the olive oil. Carefully place the seasoned chicken breasts in a single layer in the hot oil. Sear for 1-2 minutes on each side until they develop a beautiful golden-brown color. The goal here is to build flavor and create a nice crust, not to cook the chicken through. Once seared, remove the chicken breasts from the Instant Pot and set them aside on a plate.
2. Layer Potatoes, Herbs, and Chicken
Into the same Instant Pot, add the quartered and peeled potatoes, enough water to just cover the potatoes (about 2 cups), 2 tablespoons of butter, the minced fresh sage, and the minced garlic cloves. Stir gently to combine these aromatic ingredients. Now, carefully place the seared chicken breasts directly on top of the potatoes. Ensure the chicken is nestled comfortably among the potatoes, allowing everything to cook evenly. Securely attach the Instant Pot lid, making sure it’s properly sealed.

3. Pressure Cook for Perfection
Set your Instant Pot to the “Manual Pressure Cook” function on “High Pressure” with a “Normal” setting for 10 minutes. Double-check that the steam release valve is in the “Sealing” position. The Instant Pot will take approximately 10 minutes to build pressure and come to temperature before the 10-minute cooking countdown begins. Once the cooking cycle is complete, carefully perform a quick pressure release by switching the valve to the “Venting” position. Note: Be extremely cautious during this step! Hot steam will release rapidly and may splatter. Keep your hands and face away from the valve to prevent burns.

4. Create the Creamiest Mashed Potatoes
Once the pressure has fully released, carefully open the lid. Remove the cooked chicken breasts from the Instant Pot and place them on a clean plate or cutting board. Allow the chicken to rest for a few minutes while you prepare the potatoes. Drain the cooked potatoes thoroughly, then return them to the Instant Pot. Add the remaining 3 tablespoons of butter, the heavy cream, and the sour cream. Now, it’s time to mash! Use your preferred tool (a potato masher, potato ricer, or even an immersion blender) to mash the potatoes until they reach your desired creamy consistency (refer to the “Recipe Hints & Tips” section below for more mashing advice). Taste the mashed potatoes and adjust the seasoning with additional salt and pepper as needed.
5. Serve and Savor
Slice or shred the rested chicken breasts as desired. Serve the tender chicken immediately alongside the warm, creamy mashed potatoes. Garnish with a sprinkle of fresh parsley, extra sage leaves, or chopped green onions for a vibrant touch. This dish is best enjoyed fresh, but any leftovers can be stored in an airtight container in the refrigerator for up to 2 days, making it perfect for quick, re-heated meals on subsequent busy weeknights.

Frequently Asked Questions About Instant Pot Chicken
How long does chicken breast take in an Instant Pot?
One of the greatest advantages of the Instant Pot is its ability to cook chicken breast incredibly quickly while keeping it moist. For fresh chicken breasts, when using the high-pressure cook setting, they typically take 8-10 minutes. If you’re cooking chicken breasts from frozen, allow for 10-12 minutes. Always remember to adjust these times based on the size and thickness of your chicken breasts, ensuring they reach an internal temperature of 165 degrees Fahrenheit for food safety. Using a meat thermometer is the best way to confirm doneness.
Can you heat up mashed potatoes in an Instant Pot?
Absolutely! The Instant Pot is fantastic for reheating mashed potatoes without drying them out. I often prepare the potatoes earlier in the day, mash them, and then simply leave the Instant Pot on its “Keep Warm” setting until it’s time to serve dinner. This keeps them perfectly warm and creamy, ready for your meal. You can also add a splash of milk or cream when reheating to revive their texture if they seem a bit thick.
What is the trick to good mashed potatoes?
The secret to truly outstanding mashed potatoes involves a few key elements. Firstly, choose the right potato variety – Yukon Gold potatoes are my top recommendation due to their naturally creamy texture and rich flavor. Secondly, don’t skimp on the fats; plenty of butter and heavy cream are essential for achieving that luxurious, velvety consistency. These ingredients not only contribute to the texture but also enhance the overall taste significantly. Lastly, proper seasoning is paramount. Potatoes require a good amount of salt to bring out their best flavor, so always taste and adjust the seasoning before serving. A touch of freshly ground black pepper or even a pinch of nutmeg can also elevate the flavor profile.

Recipe Hints & Tips for Perfect Instant Pot Chicken Breast and Mashed Potatoes
- SEASONING IS KEY: Before you even start searing, take a moment to generously season your chicken breasts with salt and pepper. This initial seasoning is crucial for building deep flavor throughout the entire dish and will make a noticeable difference in the final taste of the chicken.
- FRESH HERB VARIATIONS: While sage and garlic are a fantastic pairing, feel free to get creative with your herbs. If fresh sage isn’t on hand, fresh thyme or rosemary make excellent substitutions, each offering a unique aromatic profile that complements chicken and potatoes beautifully.
- LIGHTER MASH OPTION: For those looking to reduce the richness, you can absolutely substitute lighter dairy products for the heavy cream. Milk, light cream, or even low-fat crème fraîche can be used, though it’s important to note that your mashed potatoes will have a less rich and creamy texture.
- REST THE CHICKEN: This is a golden rule for cooking any meat, and chicken is no exception. Once the chicken is cooked, remove it from the Instant Pot and allow it to rest on a cutting board for at least 5 minutes while you finish mashing the potatoes. Resting allows the juices within the chicken to redistribute, resulting in incredibly tender, moist, and flavorful pieces of chicken.
- MASTERING THE MASH: Achieving your ideal mashed potato consistency is all about the tool. I personally love using an Immersion Blender because it creates incredibly smooth and creamy potatoes in a matter of seconds with minimal effort. However, a traditional potato masher is perfect for those who prefer a slightly lumpier, more rustic texture. A potato ricer will produce exceptionally fine, airy mashed potatoes. A standard blender can also be used, but be careful not to overmix, which can lead to a gummy texture.
- HOW TO STORE LEFTOVERS IN THE FRIDGE: Once cooked and completely cooled, any leftover chicken and mashed potatoes should be transferred to an airtight container. They can be safely stored in the refrigerator for up to 2 days, making them perfect for quick lunches or dinners later in the week.
- HOW TO STORE LEFTOVERS IN THE FREEZER: For longer storage, this meal freezes wonderfully. Once cooked and cooled, separate the chicken and mashed potatoes into individual airtight, freezer-safe containers. They can be stored in the freezer for up to 3 months. Thaw overnight in the refrigerator before reheating.

What to Serve with This Instant Pot Chicken?
While this Instant Pot Chicken Breast and Mashed Potatoes meal is substantial on its own, adding a few fresh sides can perfectly round out your dinner. I always recommend incorporating a couple of vegetable dishes to add color, texture, and additional nutrients. Looking for some inspiration? Here are some fantastic pairings:
Delicious Vegetable Sides:
To complement the rich flavors of the chicken and potatoes, a crisp or vibrant vegetable side is ideal. Consider trying:
- Lebanese Green Beans (Lubee): These tender green beans cooked with tomatoes and garlic offer a fresh, savory contrast.
- Roasted Brussels Sprouts with Cranberries: Earthy Brussels sprouts, roasted to perfection, with a touch of sweetness from cranberries and a savory kick, provide a delightful texture.
- Mediterranean Roasted Vegetables: A colorful medley of bell peppers, zucchini, and onions, roasted with herbs, brings bright and aromatic flavors.
Fresh and Flavorful Side Salads:
A light and refreshing salad always pairs beautifully with chicken dishes, offering a cleansing counterpoint to the richness. Here are some of my go-to salad recipes:
- Lemon Arugula Salad: Peppery arugula dressed with a bright lemon vinaigrette and crunchy pine nuts makes for a simple yet elegant side.
- Mediterranean Bean Salad: A hearty and flavorful salad packed with beans, fresh vegetables, and a zesty dressing.
- Easy Lebanese Salad: A classic, refreshing salad with crisp romaine, tomatoes, cucumbers, and a simple olive oil-lemon dressing.
- Tomato Cucumber Feta Quinoa Salad: A wholesome and vibrant salad, offering a delightful mix of textures and tangy flavors.
