These Oven Baked Chicken Thighs with Risotto truly represent comfort food elevated, served conveniently in a single bowl. If you’re a fan of our popular Moroccan Chicken Thighs, the delightful Easy Baked Chicken Thighs with Cranberry, or the wholesome One Pot Mediterranean Chicken and Rice, then this recipe is an absolute must-try for your next dinner. We craft the Parmesan risotto with care, then stir in fresh spinach for a vibrant burst of color and a healthy dose of leafy greens.
The secret to this dish’s irresistible appeal lies in baking the seasoned chicken directly on top of the par-cooked risotto. This method allows the chicken juices to gently infuse the rice as it finishes cooking, deepening the flavors and creating an incredibly moist and tender result. We’ve chosen to make this Easy Spinach Risotto without wine, instead incorporating the bright, zesty juice of a lemon. This crucial addition provides a wonderful acidity, essential for balancing the rich, creamy elements of the risotto and preventing it from tasting too heavy. It’s a simple trick that makes all the difference.

Essential Recipe Ingredients

Below, you’ll find a detailed breakdown of the simple yet powerful ingredients that come together to create this incredible dish. Exact measurements are provided in the comprehensive recipe card further down the page.
- Chicken: For this recipe, we highly recommend using boneless, skinless chicken thighs. Their dark meat is inherently more flavorful and remains wonderfully juicy during baking. While chicken breast can be used, we suggest cutting it into smaller, more uniform pieces to ensure even cooking and to prevent it from drying out.
- Rice: The foundation of any great risotto is the right kind of rice. Arborio rice is our top choice due to its high starch content, which is crucial for achieving that signature creamy texture. It’s widely available in most grocery stores.
- Spinach: We incorporate 3 cups of fresh spinach, gently folding it into the finished risotto until it’s just wilted. This adds a lovely touch of color, freshness, and a boost of nutrients. Feel free to experiment with other leafy greens like kale, arugula, or Swiss chard for a slight variation.
- Cheese: Freshly grated Parmesan cheese is indispensable. It melts beautifully into the risotto, imparting a nutty, salty depth that elevates the entire dish. Don’t skimp on quality here!
- Lemon: The juice of one fresh lemon is key to balancing the richness of the risotto. Its bright acidity cuts through the creaminess, creating a more complex and refreshing flavor profile. We’ve opted for a spinach and Parmesan risotto without wine in this recipe, but if you prefer, a splash of dry white wine can replace the lemon for a different kind of acidity.
- Seasoning: Our custom blend of spices for the chicken ensures maximum flavor. We combine salt, black pepper, smoked paprika (for a hint of warmth and color), dried thyme, and garlic powder. These ingredients, mixed together in a small bowl, create a robust rub that adheres perfectly to the chicken.
- Olive Oil: Used for searing the chicken and sautéing the aromatics, imparting a rich, fruity note.
- Onions & Garlic: The aromatic backbone of the risotto, providing a foundational layer of savory flavor.
- Chicken Broth: The liquid base for the risotto. Using warm broth helps maintain a consistent cooking temperature. For a vegetarian version, substitute with high-quality vegetable broth.
- Unsalted Butter: Added at the end, butter contributes to the luxurious, glossy finish and creamy mouthfeel of the risotto.

How to Prepare Oven Baked Chicken Thighs with Risotto
Follow these detailed steps to create a show-stopping dinner that will impress everyone at your table. Precision and a little patience are key to the perfect risotto!
Step 1: Season the Chicken Begin by preheating your oven to 325°F (160°C). In a medium bowl, combine your boneless, skinless chicken thighs with ½ tablespoon of olive oil. Next, sprinkle in all the prepared seasoning blend (salt, black pepper, paprika, dried thyme, and garlic powder). Use your hands to thoroughly mix and coat each piece of chicken evenly with the aromatic spices. This ensures every bite is bursting with flavor.

Step 2: Sear the Chicken Heat an oven-safe skillet (preferably cast iron or a heavy-bottomed pan) over medium-high heat. Add 2 tablespoons of olive oil to the hot skillet. Once the oil shimmers, carefully add the seasoned chicken thighs. Sear the chicken for approximately 3 minutes per side, until a beautiful golden-brown crust develops. This searing step locks in flavor and creates a more appealing texture. Remove the seared chicken from the skillet and set it aside on a clean plate. Discard any excess oil from the skillet and gently wipe it clean with a paper towel. This prevents any burnt bits from affecting the flavor of your risotto.

Step 3: Sauté the Aromatics Add the remaining tablespoon of olive oil to the same (now clean) skillet and return it to medium-high heat. Add the diced onions and minced garlic to the pan. Sauté for 3-5 minutes, stirring occasionally, until the onions soften and become translucent and the garlic is fragrant. Be careful not to burn the garlic.
Step 4: Begin the Risotto Base Add the Arborio rice to the skillet with the sautéed vegetables. Stir continuously for 1-2 minutes until the rice grains become translucent around the edges, with a tiny opaque center. This is called “toasting” the rice and it’s an important step for flavor and texture. Now, begin adding the warm chicken broth, one cup at a time. Pour in the first cup and stir gently until it is almost completely absorbed by the rice before adding the next. This gradual addition and constant stirring are crucial for releasing the starches from the rice, creating that characteristic creamy consistency. Do not rush this process – stay close to the stove and stir often. Once the rice has absorbed almost all the broth (it should still be slightly soupy, as it will finish cooking in the oven), remove the skillet from the heat.

Step 5: Finish and Bake To the skillet with the risotto, add the fresh spinach and gently fold it into the rice until it just begins to wilt. Next, stir in the unsalted butter, the juice of one lemon, and the freshly shredded Parmesan cheese. Mix well until all ingredients are thoroughly combined and the risotto is wonderfully creamy. Finally, arrange the seared chicken thighs on top of the risotto mixture in the skillet. Transfer the skillet to your preheated oven and bake for 30 minutes, or until the chicken is cooked through and golden, and the risotto is perfectly tender and creamy. To serve, garnish with a little extra Parmesan cheese, if desired.
Recipe Tip for Ultra-Creamy Risotto: The secret to truly magnificent risotto lies in consistent stirring. When making risotto, it’s vital to stay near the stove and stir frequently. This constant agitation gently rubs the grains of Arborio rice against each other, encouraging them to release their starches. These starches are what create that coveted, velvety, and undeniably creamy texture that defines a perfect risotto. Skipping this step can result in a more granular, less satisfying dish. So, stir often for the creamiest results!

Exciting Recipe Variations to Try
This Oven Baked Chicken Thighs with Risotto recipe is incredibly versatile, allowing for numerous delicious customizations. Feel free to get creative in your kitchen!
- Vegetable Swaps: Beyond spinach, many other vegetables can be incorporated. Consider swapping the fresh spinach leaves for finely chopped kale, Swiss chard, broccolini florets, sliced mushrooms, or even a cup of sweet green peas. Add most of these in the last few minutes of cooking the risotto to prevent them from becoming overly soft.
- Aromatic Herbs: Elevate the fresh flavors by stirring through some fresh herbs along with the spinach leaves. Fresh parsley and basil are excellent choices that complement the chicken and creamy risotto beautifully. A hint of fresh oregano or chives could also be delightful.
- Go Vegetarian: To transform this into a magnificent meat-free meal, substitute the chicken thighs with hearty cubes of butternut squash or sweet potato. Coat the squash or potato in the same spice blend used for the chicken and place them on top of the rice to roast in the oven. Remember to replace the chicken broth with a good quality vegetable broth to maintain the vegetarian integrity of the dish. You could also add some pan-seared halloumi cheese for extra protein and flavor!
- Spice It Up: If you enjoy a bit of heat, add a pinch of red pepper flakes to the seasoning mix for the chicken, or stir a dash into the risotto itself.
- Cheese Choices: While Parmesan is classic, experiment with other cheeses. A blend of Parmesan and a little creamy mascarpone stirred in at the end can make the risotto even richer. A touch of Pecorino Romano could add a sharper, saltier note.
- A Dash of Wine: As mentioned, we opted for lemon, but for a more traditional risotto flavor, you can deglaze the pan with ½ cup of dry white wine (like Pinot Grigio or Sauvignon Blanc) after sautéing the onions and garlic, letting it absorb before adding the broth.
Expert Tips for Success
- Warm Broth is Key: Always keep your chicken broth warm in a separate pot before adding it to the rice. Adding cold broth will cool down the risotto, interrupting the cooking process and potentially leading to a less creamy texture.
- Don’t Overcook the Rice: Risotto should be ‘al dente’ – firm to the bite but not hard. It will continue to cook slightly in the oven.
- Taste and Adjust: Always taste your risotto before adding the final butter and cheese. Adjust seasoning (salt and pepper) as needed.
- Rest Before Serving: Let the dish rest for 5 minutes after coming out of the oven. This allows the flavors to meld and the risotto to achieve its optimal consistency.
Storage & Reheating Tips
Proper storage ensures you can enjoy your delicious leftovers for days to come!
- Refrigeration: Store any leftover risotto and chicken in an airtight container in the refrigerator for up to 3 days. It makes for a fantastic quick lunch the next day.
- Reheating: This dish can be easily reheated in the microwave or on the stovetop. If reheating on the stovetop, place it in a skillet over medium-low heat. Risotto tends to thicken and dry out when cooled, so if it looks a little dry, simply add a splash of chicken broth (or water) to loosen it up and restore its creamy texture. Stir gently until heated through.
- Creative Leftovers: Leftover risotto can also be ingeniously transformed into arancini (fried risotto balls) for a fun and gourmet appetizer or a quick, satisfying lunch or dinner.
- Freezing: While risotto can be frozen, its texture can become a bit softer upon thawing. If you choose to freeze it, ensure it’s in an airtight, freezer-safe container for up to 1-2 months. Thaw in the refrigerator overnight and reheat with a splash of broth.

50 minutes
4
servings
Ingredients
- 4 tablespoons extra virgin olive oil, divided
- 4 boneless, skinless chicken thighs
- 1 cup diced onions
- 3 cloves garlic, minced
- 2 cups Arborio rice
- 6 cups chicken broth, (or vegetable broth)
- 3 cups fresh spinach
- 3 tablespoons unsalted butter
- 1 cup freshly shredded Parmesan cheese
- 1 lemon, juiced
- Pinch salt
- Pinch pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
Instructions
-
Preheat oven to 325°F (160°C). In a bowl, toss the chicken thighs with ½ tablespoon of olive oil and all the chicken seasonings (salt, pepper, paprika, thyme, garlic powder). Mix well until the chicken is evenly coated.
-
Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Sear the seasoned chicken for 3 minutes per side until golden brown. Remove chicken from skillet and set aside. Discard excess oil and wipe the skillet clean with a paper towel.
-
Add the remaining 1 tablespoon of olive oil to the clean skillet and heat over medium-high heat.
-
Add diced onions and minced garlic to the skillet. Sauté until the onions become tender and translucent, about 3-5 minutes. Add the Arborio rice and stir for 1-2 minutes until the edges of the rice grains are translucent.
-
Begin adding the warm chicken broth to the skillet, one cup at a time. Stir continuously and allow each cup of broth to be almost completely absorbed by the rice before adding the next. Continue until almost all the broth is used and the risotto is creamy but still slightly soupy.
-
Once the rice has absorbed most of the broth, remove the skillet from the heat.
-
Fold the fresh spinach into the rice until just wilted. Stir in the butter, the juice of 1 lemon, and the freshly shredded Parmesan cheese until well combined and creamy.
-
Place the seared chicken thighs on top of the risotto mixture in the skillet. Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and golden, and the risotto is tender. Garnish with extra Parmesan cheese if desired, and serve immediately. Enjoy!
Notes
- It’s perfectly fine if the rice hasn’t completely soaked up that last cup of broth prior to removing from heat! It will finish cooking to perfection in the oven.
- Wiping the skillet clean after searing the chicken is an important step. It prevents any browned bits from potentially burning and negatively impacting the color and flavor of your creamy risotto.
- Store any leftover risotto in an airtight container in the refrigerator for up to 3 days.
- This dish can be easily reheated in the microwave, or gently warmed on the stovetop. If the risotto appears a little dry after refrigeration, simply add a splash of chicken broth or water to loosen it up and restore its creamy consistency.
