What Exactly is Kofta? Exploring This Mediterranean Delicacy

Kofta, also known as kafta, is a beloved and ancient dish found throughout the Middle East, South Asia, and the Balkans. It typically refers to a family of meatball or meatloaf-like dishes made from ground meat, most commonly lamb, beef, or chicken, meticulously seasoned and often shaped into patties, balls, or cylindrical kebabs. The exact preparation and ingredients can vary greatly from region to region, reflecting the rich culinary diversity of these cultures.

At its heart, kofta is about blending finely minced meat with a medley of aromatic ingredients. Fresh herbs like parsley and mint, alongside finely chopped onion and garlic, provide a fresh base. What truly defines kofta, however, is its distinctive warm spice blend, which can include cumin, coriander, cinnamon, and allspice. These ingredients are combined to create a mixture that is then formed around skewers, grilled over open flames, baked in an oven, or pan-fried until tender and juicy.

When you dine at a Mediterranean or Middle Eastern restaurant, a chicken kofta sandwich is often a menu highlight. Our recipe captures the essence of this experience, allowing you to recreate it at home. Imagine savoring these savory chicken kofta in a warm pita, generously filled with crisp fresh vegetables, a drizzle of creamy tahini yogurt dressing, and a dollop of rich hummus. It’s a taste adventure that transports you straight to the heart of the Mediterranean!

Key Ingredients for Flavorful Chicken Kofta

Crafting delicious chicken kofta starts with a selection of fresh, high-quality ingredients. Here’s a detailed look at what you’ll need to create this amazing dish. For precise measurements and step-by-step instructions, please refer to the comprehensive recipe card below.

  • Ground Chicken: The star of our kofta, ground chicken offers a lighter alternative to traditional beef or lamb, yet remains rich in protein and incredibly flavorful. Its mild taste perfectly absorbs the robust spices. For variation, you can easily substitute ground turkey, ground lamb, or even ground beef, adapting the recipe to your preference.
  • Aromatic Spices and Fresh Herbs: This is where the magic happens! Our signature blend features fresh parsley and fresh mint, providing a burst of bright, herbaceous notes. These are complemented by a warm spice profile including earthy cumin and ground coriander, a hint of sweet cinnamon and allspice, fragrant cloves, and subtle oregano. For an added kick, crushed red pepper and a touch of cayenne can be included. Feel free to adjust these spices to match your personal taste preference, making it milder or spicier.
  • Onion & Garlic: Essential aromatics that form the backbone of the kofta’s flavor. Finely minced, they infuse the meat with depth and a delightful savory essence.
  • Breadcrumbs: While not always traditional in all kofta recipes, I find that a small amount of plain breadcrumbs acts as a fantastic binder. They help hold the kofta mixture together, ensuring your kebabs maintain their shape beautifully during cooking, resulting in a tender texture.
  • Egg: Acts as an additional binding agent, helping to emulsify the mixture and create a more cohesive kofta that stays together on the skewer or as a patty.

Step-by-Step Guide: Crafting Your Own Delicious Chicken Kofta

Making homemade Chicken Kofta is a straightforward process that yields incredibly flavorful results. Follow these steps to create perfect kebabs every time, whether you’re grilling, baking, or cooking on the stovetop.

Step 1: Prepare Your Skewers (If Grilling)
If you plan to use wooden skewers, it’s crucial to soak them in water for at least 30-60 minutes before grilling. This prevents them from burning on the grill. For metal skewers, simply set aside about 6-8, depending on your desired kebab size. Preheat your grill to medium-high heat for 10-15 minutes prior to cooking.

Step 2: Create the Flavorful Kofta Mixture
In a food processor, combine the roughly chopped onion and garlic cloves. Pulse until they are very finely minced. Next, add the ground chicken, fresh parsley, fresh mint, salt, black pepper, cumin, coriander, cinnamon, allspice, cloves, red pepper flakes (if using), cayenne pepper (if using), and oregano to the food processor. Pulse a few times to start incorporating the ingredients.

Add the egg and continue to process until the ground chicken mixture begins to thicken and all ingredients are thoroughly combined. Finally, add the breadcrumbs and process briefly until they are fully integrated into the mixture. The mixture should be cohesive but not overly processed.

Step 3: Form the Chicken Kofta Kebabs
Transfer the chicken kofta mixture from the food processor to a large mixing bowl. If the mixture feels too wet to form, gradually add a tablespoon or two more of breadcrumbs and mix well by hand. Using your hands, firmly mold approximately 1 to 1 1/2 inch thick kebabs around your prepared skewers, making them as long as you desire. Ensure the mixture is pressed firmly onto the skewers to prevent it from falling off during cooking.

Step 4: Cook Your Kofta to Perfection
Place the formed kebabs directly on the preheated grill. Grill for about 4-5 minutes per side, turning once, until they are beautifully browned and cooked through. Ensure the internal temperature reaches 165°F (74°C) for food safety. The total cooking time will vary depending on your grill’s heat and the thickness of your kebabs.

Once cooked, serve these delightful chicken kofta kebabs immediately. They make a fantastic chicken kofta bowl when paired with your favorite warm pita bread, creamy hummus or smoky baba ganoush, a refreshing tomato cucumber salad, vibrant tabbouleh, fluffy brown rice, and a generous drizzle of the accompanying tahini garlic sauce. Any leftover cooked kofta can be stored in an airtight container in the refrigerator for up to 4 days.

Elevate Your Kofta: Tips for Perfect Results and Creative Modifications

This Chicken Kofta recipe is wonderfully adaptable, allowing you to tweak flavors and cooking methods to suit your preferences. Here are some essential tips and exciting ways to modify your kofta:

Flavor Customization:

  • Spice It Up: The spice blend is key to kofta’s authentic taste. For a different twist, consider adding a pinch of Aleppo pepper for mild heat and fruity notes, a dash of sumac for a tangy zest, or a sprinkle of za’atar for an earthy, aromatic flavor. You can increase the crushed red pepper or cayenne for more heat, or reduce them for a milder version. Remember, you can always adjust the amount of cinnamon if it’s not to your liking.
  • Herb Variations: Fresh herbs truly brighten the flavor. While parsley and mint are classic, experimenting with fresh dill can add another layer of aromatic depth. Feel free to use a combination or focus on your favorite.

Cooking & Shaping Flexibility:

  • No Skewers? No Problem! While traditionally served on skewers, you don’t necessarily need them. If you form the kofta mixture into larger, flatter patties (like mini burgers), they can be easily grilled, baked, or pan-fried without skewers.
  • Beyond Kebabs: The versatile kofta mixture isn’t just for skewers. You can easily roll it into delicious chicken kofta meatballs and bake them, air fry them, or simmer them in a sauce. Alternatively, form them into burger-sized patties for a Mediterranean-inspired burger night. These patties are excellent served over rice or a bed of hummus.

Preparation & Cooking Tips:

  • The Breadcrumb Advantage: Although some traditional kofta recipes omit breadcrumbs, I find them incredibly helpful for consistency. They act as a binder, ensuring the kebab mixture holds its shape better, especially during grilling.
  • Chill for Success: A simple yet effective tip is to refrigerate the formed kebabs for about 5-10 minutes before cooking. This brief chill time helps the chicken mixture firm up, preventing it from crumbling or falling apart on the grill or in the pan.
  • Cooking Methods: This recipe is designed to be flexible. While grilling imparts a wonderful smoky flavor, you can also bake your kofta in a preheated oven at 375°F (190°C) for 15-20 minutes, flipping halfway, or cook them on a hot skillet until golden brown and cooked through. Regardless of the method, always ensure the internal temperature reaches 165°F (74°C) for safe consumption.
  • Adjusting Spices: The spice blend provided is a recommendation. If you’re not a fan of cinnamon, feel free to halve the amount or omit it entirely. For those who prefer less heat, simply leave out the crushed red pepper and cayenne pepper. Taste and adjust to make it perfect for your palate!

  • 1/4 tsp salt, or more to taste

Instructions

For the Chicken Kofta:

  1. If using wooden skewers, soak them in water for at least an hour before grilling. For metal skewers, simply have 6-8 ready depending on your desired kebab size.
  2. Preheat your grill to medium-high heat for 10-15 minutes before you begin grilling.

  4. Add the egg and process until the chicken mixture starts to become thick and everything is well mixed.
  5. Add the breadcrumbs and process until thoroughly combined. Remove the chicken mixture from the food processor and place it into a large mixing bowl. If the mixture still feels very wet and difficult to form, add an additional 1/4 cup of breadcrumbs and mix well by hand.
  6. Using your hands, form the mixture into 1 to 1 1/2 inch thick kebabs around your skewers, shaping them to your desired length. Repeat until all the chicken mixture is used.
  7. Place the kebabs on the preheated grill and cook over medium-high heat for about 4-5 minutes on one side, then flip and grill for another 4-5 minutes, or until cooked through (internal temperature 165°F/74°C). Serve the kebabs with your favorite pita, hummus, tabbouleh, and a generous drizzle of the tahini garlic sauce.

For the Tahini Garlic Sauce:

  1. Place all ingredients for the Tahini Garlic Sauce in a food processor and process until smooth and well combined. Add more water as needed to achieve your desired consistency.

Notes

  • These kofta are incredibly versatile! Try them on top of a vibrant Fattoush salad or alongside a refreshing Tabbouleh.
  • For a quick and delicious meal, make a pita sandwich by filling warm pita bread with chicken kofta, sliced tomato, a scoop of tabbouleh, creamy hummus, and a drizzle of the tahini garlic sauce.
  • While some traditional chicken kafta recipes may not use breadcrumbs, I include them to improve the consistency of the meat, making it easier to form and ensuring the kebabs stay together on the skewers during cooking.
  • Don’t want to use skewers? This mixture can also be formed into patties. These chicken patties are fantastic as burgers or served over a bed of hummus and rice for a hearty meal.
