  • 1/4 cup cilantro, freshly chopped
  • 1-15 oz diced tomatoes with chilies, drained (I used Rotel)
  • 1/2 tsp cumin
  • 1/2 tsp chili powder

Instructions

  1. Heat olive oil in a medium pan over medium-high heat. Cook the garlic, onion, and jalapeno pepper until softened, then reduce heat to medium-low.
  2. Add the shredded American cheese and Pepper Jack cheese, along with the cream or whole milk. Continuously stir until all the cheese is melted and smooth.
  3. Stir in the drained diced tomatoes with green chilies, freshly chopped cilantro, cumin, and chili powder. Continue to heat for 1-2 minutes, stirring constantly to incorporate all ingredients and ensure the dip is thoroughly warmed.
