Key Ingredients for the Perfect Creamy Tortellini Soup
Crafting this flavorful Creamy Tortellini Soup requires a selection of fresh, wholesome ingredients that work in harmony to create its signature taste and texture. For precise measurements and detailed instructions, always refer to the complete recipe card provided below.

- Fresh Vegetables: This soup is generously packed with nutrition and flavor from a vibrant mix of vegetables. We use aromatic sweet onion, crunchy carrots, crisp celery, and tender fresh spinach. Diced tomatoes contribute a rich, tangy base.
- Tomato Paste: Essential for adding depth and a concentrated umami flavor to the broth. It also helps to slightly thicken the soup. If you prefer a slightly thinner texture, you can substitute it with a good quality tomato sauce.
- Dry White Wine: A secret weapon for deglazing the pan, which helps unlock all the delicious browned bits at the bottom, contributing immense flavor. It also adds a bright, acidic note to the soup. For an alcohol-free alternative, an equal amount of vegetable or chicken broth works perfectly.
- Italian Seasoning: This blend of herbs like oregano, basil, thyme, and rosemary provides the classic earthy and aromatic Italian flavor profile that makes this soup truly authentic and comforting.
- Tortellini: For the best results, we recommend using fresh cheese tortellini. Its tender texture holds up wonderfully in the soup. Frozen tortellini is also a great option; simply add it directly from the freezer without thawing. While fresh tortellini is ideal for a vegetarian soup, feel free to experiment with sausage or chicken-filled tortellini if you’re not keeping it meatless. We advise against using dried tortellini, as it tends to lose its shape and become mushy in soups.
- Heavy Cream: This is what gives our soup its luxurious, creamy texture and rich mouthfeel. For dairy-free options, full-fat coconut milk or cashew cream can be excellent substitutes. Half-and-half or whole milk can also be used for a lighter creaminess, or you can omit it entirely for a more brothy soup.
- Parmesan Cheese: Stirred in at the end, Parmesan cheese not only enhances the creaminess but also adds a wonderful salty, umami finish that complements the other flavors beautifully. Save a little extra for garnishing!

Exciting Ways to Customize and Vary This Recipe
One of the best aspects of this Creamy Tortellini Soup is its adaptability. Don’t be afraid to get creative and tailor it to your taste or what you have available!
- Boost with Protein: Easily transform this vegetarian base into a heartier meal. Consider adding browned Italian sausage (sweet or spicy), shredded rotisserie chicken, ground turkey, or even plant-based protein like crumbled tofu or hearty white beans and chickpeas for an extra texture and nutritional punch.
- Add More Beans: For an even more filling and fiber-rich soup, stir in a can of drained and rinsed cannellini beans (white beans) or chickpeas during the simmering stage. They absorb the broth beautifully and add a creamy texture.
- Load Up on Veggies: Increase the nutrient content and flavor by incorporating more of your favorite vegetables. Bell peppers (any color), zucchini, mushrooms, peas, green beans, or broccoli florets can be added along with the carrots and celery, or later in the cooking process, depending on how tender you like them.
- Turn Up the Spice: If you crave a little heat, introduce some spice! A pinch of crushed red pepper flakes added with the garlic, a dash of cayenne pepper, or a spoonful of potent Calabrian chili paste can add a delightful warmth and kick to your soup.
- Fresh Herb Finish: Elevate the fresh flavors by finishing the soup with a generous sprinkle of fresh herbs. Chopped fresh oregano, basil, parsley, or thyme can add a bright, aromatic flourish just before serving.
- Extra Creaminess: For an even more indulgent and creamy consistency, stir in a couple of ounces of cream cheese or mascarpone cheese along with the heavy cream. This adds a subtle tang and luxurious richness.
Recipe Tip: To maintain the perfect texture and prevent your tortellini from becoming soft and mushy, be careful not to overcook it. It cooks quickly in hot soup!

Easy Step-by-Step Instructions for Creamy Tortellini Soup
Creating this delicious soup is simpler than you think! Follow these detailed steps for a perfect bowl every time.
Step 1: Sauté the Aromatic Vegetables
Begin by heating a large soup pot or Dutch oven over medium heat. Add the olive oil and allow it to shimmer. Once heated, add your diced onion, sliced carrots, and chopped celery to the pot. Sauté these vegetables for about 5 to 7 minutes, stirring occasionally, until the onions become translucent and fragrant. The carrots do not need to be fully tender at this stage, as they will continue to cook in the broth.

Step 2: Build Flavor and Deglaze
Add the minced garlic and tomato paste to the sautéed vegetables. Cook for another 1 to 2 minutes, stirring continuously and spreading the tomato paste along the bottom of the pan to lightly toast it. This step deepens its flavor. Next, deglaze the pot by pouring in the dry white wine. Stir vigorously for 2 to 3 minutes, making sure to scrape up any browned bits that may have stuck to the bottom of the pan. These bits are packed with flavor and will enrich your soup.
Step 3: Simmer the Broth
Now, add the low-sodium vegetable broth, diced tomatoes (undrained), kosher salt, Italian seasoning, and coarse ground pepper to the pot. Bring the mixture to a rolling boil, then reduce the heat to medium-low to maintain a gentle simmer. Allow the soup to simmer for approximately 10 minutes, or until the carrots are tender when pierced with a fork. This simmering time allows the flavors to meld beautifully.

Step 4: Cook the Tortellini and Add Cream
Once the carrots are tender, add the fresh cheese tortellini and heavy cream to the soup. Stir gently and cook for about 3 to 4 minutes, or just until the tortellini is heated through and tender. Remember the golden rule: do not overcook the tortellini, or it will become soft and mushy, losing its delightful texture.
Step 5: Wilt Spinach and Finish with Cheese
Finally, sprinkle in the Parmesan cheese and baby spinach. Stir the soup until the Parmesan cheese has melted into the broth and the spinach has wilted to a vibrant green. Remove the pot from the heat immediately. Serve your creamy tortellini soup hot, optionally garnished with an extra sprinkle of fresh Parmesan cheese and a dash of black pepper for a perfect finish. Enjoy!

Perfect Pairings: What to Serve with Creamy Tortellini Soup
This rich and comforting soup is a meal in itself, but it also pairs beautifully with a variety of side dishes that can elevate your dining experience. Here are some suggestions:
- Fresh Salads: A crisp, light salad provides a wonderful contrast to the soup’s creaminess. Try a peppery Lemon Arugula Salad Recipe with Parmesan Cheese, a zesty Arugula Salad with Capers, or a refreshing Kale Salad with Lemon Dressing.
- Roasted Vegetables: Complement the soup’s flavors with tender, caramelized roasted vegetables. Our Mediterranean Roasted Vegetables, spicy Curry Roasted Cauliflower, or aromatic Za’atar Roasted Carrots are excellent choices.
- Savory Potatoes: For a more substantial meal, potatoes make a fantastic side. Explore the robust flavors of Lebanese Spicy Potatoes (Batata Harra), the bright notes of Lemon Cilantro Roasted Potatoes, or the comforting indulgence of Air Fryer Twice Baked Potatoes.
- Crusty Bread: A must-have for soaking up every last drop of the creamy broth. Serve with warm crusty bread, garlic bread, or focaccia.
Storage Instructions & Make-Ahead Tips for Convenience
This Creamy Tortellini Soup is delightful fresh, but it can also be prepared and stored for future enjoyment with a few considerations:
- Refrigeration: Store any leftover soup in an airtight container in the refrigerator for up to 3 to 4 days. The flavors often deepen overnight, making for an even more delicious meal the next day.
- Freezing Limitations: We generally do not recommend freezing this soup with the tortellini already in it. Pasta, especially tortellini, tends to absorb too much liquid and become soggy and mushy upon thawing and reheating, significantly compromising its texture.
- Freezing Smart: If you anticipate wanting to freeze a portion of the soup, it’s best to cook and store the tortellini separately. Prepare the soup base (broth and vegetables) and freeze it in an airtight container. When you’re ready to enjoy it, thaw the soup base, reheat it on the stovetop, and then cook and add fresh tortellini during the last few minutes of heating.
- Make-Ahead Strategy: For convenient meal prep, you can make the soup base (sautéed vegetables, broth, tomatoes, and seasonings) a day or two in advance. Store it in the refrigerator. When you’re ready to serve, simply reheat the base, and then add the cream, tortellini, and spinach, cooking until the tortellini is tender and the spinach has wilted. This significantly cuts down on active cooking time on a busy weeknight.
Frequently Asked Questions About Creamy Tortellini Soup
Absolutely, frozen tortellini works perfectly in this soup! There’s no need to thaw it beforehand. Simply add the frozen tortellini directly to the simmering soup and cook according to package directions, typically for 3-5 minutes, or until it’s just tender. Be careful not to overcook, as it can get mushy.
Yes, you can definitely prepare the soup ahead of time, which is great for meal planning! For the best texture, we recommend cooking the tortellini separately and storing it apart from the soup base. When you’re ready to serve, gently reheat the soup base and then add the cooked tortellini during the final few minutes of heating. This prevents the tortellini from becoming too soft or absorbing too much liquid.
Certainly! This soup is highly versatile for adding protein. Excellent options include browning some Italian sausage (sweet or spicy) at the beginning with the vegetables, stirring in shredded chicken (leftover or rotisserie chicken works great), or adding plant-based protein like canned white beans or chickpeas. Lentils could also be simmered into the broth for a heartier, vegetarian protein boost.
Yes, with a few simple substitutions, you can easily make this soup dairy-free. Omit the heavy cream and Parmesan cheese. For creaminess, you can use full-fat coconut milk (for a subtle coconut flavor), unsweetened almond milk, or a homemade cashew cream. Nutritional yeast can also be added for a cheesy, savory flavor without dairy.
For the best results, fresh cheese tortellini is highly recommended as it maintains its texture and shape beautifully in the soup. Frozen tortellini is also a good alternative. We advise against using dried tortellini, which can become overly soft or mushy in the broth. Feel free to use different fillings like spinach-ricotta or mushroom tortellini for a flavor variation.

Creamy Tortellini Soup
Julia Jolliff
10 mins
25 mins
35 mins
6
Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 medium carrots, sliced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- ½ cup dry white wine, or vegetable broth
- 6 cups low sodium vegetable broth
- 1 – 14.5 ounces can diced tomatoes
- 1 teaspoon kosher salt
- 1 teaspoon Italian seasoning
- 1/2 teaspoon coarse ground pepper
- 16-18 ounces bag fresh cheese tortellini
- 1/2 cup heavy cream
- 1/4 cup Parmesan cheese, plus more for garnish
- 3 cups baby spinach
Instructions
-
Heat a large soup pot or Dutch oven over medium heat and add the olive oil. Once heated, add the onion, carrots, and celery.
-
Sauté for about 5-7 minutes or until the onions are translucent. The carrots don’t need to be fully cooked yet.
-
Add the garlic and tomato paste. Cook, stirring (and spreading the tomato paste along the bottom of the pan) for 1-2 minutes. Deglaze the pot with the white wine (or broth). Stir for 2-3 minutes, making sure to scrape the bottom of the pan to get any stuck bits off it.
-
Add the broth, diced tomatoes, salt, Italian seasoning, and pepper. Bring the pot to a boil then reduce the heat to medium low to keep a gentle simmer. Simmer until the carrots are tender, about 10 minutes.
-
Add the tortellini and cream and heat for about 3-4 minutes, until tortellini is tender. Do not overcook.
-
Sprinkle the Parmesan cheese and spinach in and stir until the cheese is melted and the spinach wilted. Remove from the heat and serve hot with a sprinkle of Parmesan, if desired.
Notes
- If you are not aiming for a vegetarian soup, feel free to use chicken broth instead of vegetable broth for a richer flavor.
- Should you prefer not to use wine, substitute it with an additional ½ cup of vegetable or chicken broth.
- Frozen tortellini can be used in place of fresh. Add it about 10 minutes after the liquid starts simmering to ensure it cooks through properly.
- When using regular broth instead of low sodium, be cautious with adding salt. Taste the soup first and adjust seasoning as needed to prevent it from becoming too salty.
- For a different green, kale can be swapped in for spinach. Add it a few minutes before the tortellini to allow it to wilt down.
- Store any leftovers in an airtight container in the fridge for 3-4 days.
- Freezing the soup with tortellini is not recommended as the pasta can become soggy and mushy upon thawing.
