  • 2 1/2 to 3 pounds boneless short ribs, fat trimmed {if using bone-in, aim for 3 1/2 to 4 pounds}

  • 1/4 cup sweet onion, diced
  • 1 – 15 ounce can of diced tomatoes
  • 1 – 15 ounce can of tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 2 bay leaves

Additional ingredients to serve:

  • Risotto (or pasta, polenta, mashed potatoes)
  • Fresh parsley, for garnish
  • Freshly grated parmesan cheese, for serving

Instructions

  1. Remove the short ribs from the fridge about 15 minutes before you are ready to cook them to allow them to come to room temperature.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Season both sides of the short ribs generously with salt and pepper.
  3. Once the oil is hot and shimmering, add the seasoned short ribs to the skillet. Sear the short ribs for 3 to 4 minutes per side to achieve a beautiful brown crust. You may need to work in batches to avoid overcrowding the pan.
  4. Carefully transfer the seared short ribs to the slow cooker insert, arranging them in an even layer if possible.
