  • 1 large red bell pepper, seeds removed, diced (or color of your choice)
  • 1 jalapeño, seeds removed, diced (for mild heat, remove seeds and membranes)
  • 3 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne pepper, (optional, adjust to taste for spice)
  • 2 tablespoons unsweetened cocoa powder, (secret ingredient for richness, optional)
  • 15 ounce can pinto beans, or black beans, drained and rinsed
  • 15 ounce can kidney beans, drained and rinsed
  • 15 ounce can fire roasted diced tomatoes, undrained
  • 15 ounce can diced tomatoes, undrained
  • 2 tablespoons tomato paste

Instructions

For the Slow Cooker:

  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the ground beef and cook, breaking it apart, until it is fully browned. Drain any excess fat and transfer the browned beef to your slow cooker.
  2. Add the diced onion, minced garlic, bell pepper, jalapeño, chili powder, cumin, paprika, oregano, cayenne pepper, and cocoa powder to the slow cooker. Stir in the drained and rinsed pinto beans, kidney beans, fire-roasted diced tomatoes, regular diced tomatoes, and tomato paste. Stir everything thoroughly to combine.
  3. Cover and cook on low for 5-6 hours, or on high for 3-4 hours, until the flavors are rich and well-developed.

  3. Drain any excess fat from the pot. Return the pot to the stove. Add the bell pepper, jalapeño, chili powder, cumin, paprika, oregano, cayenne pepper, and cocoa powder. Stir and cook for another 1-2 minutes to toast the spices.
  4. Add the drained beans, fire-roasted diced tomatoes, regular diced tomatoes, and tomato paste. Stir well to combine all ingredients.
  5. Bring the chili to a gentle simmer, then reduce the heat to low, cover, and let it simmer on the stove for 1 to 2 hours, stirring occasionally. The longer it simmers, the richer the flavor. Garnish with your favorite toppings and serve hot.
