  4. Stir in the taco seasoning and water. Simmer the mixture for about 5 minutes or until thickened.
  5. Add the diced tomatoes with green chiles, black beans, and sour cream {optional} to the skillet. Heat through, stirring occasionally, until everything is well combined.
  6. Mix the shredded cheddar cheese and shredded pepper jack cheese in a medium mixing bowl. In a small bowl mix 1 cup of the crushed Doritos with 1/4 cup of the cheese mixture.
