  1. Preheat oven to 350°F (175°C) and generously grease a 13″ x 9″ baking dish with non-stick cooking spray or butter.
  2. Bring a large pot of lightly salted water to a boil. Scrub the russet potatoes thoroughly and carefully place the whole, unpeeled potatoes into the boiling water. Cook for approximately 20 minutes, or until slightly tender but still firm. Remove from the water and let them sit until cool enough to handle comfortably.
  3. Gently peel the par-cooked potatoes and carefully slice them into uniform 1/8-inch rounds. Arrange one-third of the sliced potatoes, overlapping slightly, in a single layer at the bottom of the prepared baking pan. Lightly season this layer with salt and freshly ground black pepper. Spoon half of the tub of Spinach Artichoke & Parmesan Greek Yogurt Dip over the potatoes and spread it evenly with a spatula.
