Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian pork sausage, casings removed
  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1/2 cup sweet onion, chopped
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 9-10 lasagna noodles (regular, uncooked)
  • 2 cups mozzarella cheese, shredded, divided
  • 1 1/2 cups cottage cheese
  • 1 cup ricotta cheese, part-skim
  • 1/4 cup Parmesan cheese, freshly grated, for garnish
  • Fresh parsley, chopped, for garnish
  • Fresh basil, chopped, for garnish

Instructions

  1. Cook Meat: In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add the ground beef and Italian sausage, breaking the meat apart with a wooden spoon as it cooks. Continue cooking until both meats are thoroughly browned, about 5-7 minutes. Drain any excess fat from the pot and return the meat to the pot.
  2. Add Sauce Ingredients: To the browned meat, add the minced garlic, chopped onion, diced carrots, and diced celery. Sauté for 5-7 minutes until the vegetables begin to soften and become fragrant. Stir in the diced tomatoes, tomato sauce, tomato paste, dried oregano, and dried thyme. Bring the mixture to a gentle simmer and cook for 10 minutes, allowing the flavors to meld. Remove from heat and set aside.
  3. Create Cheese Mixture: In a separate mixing bowl, combine 1 cup of shredded mozzarella cheese, 1 1/2 cups of cottage cheese, and 1 cup of part-skim ricotta cheese. Mix well until all cheeses are thoroughly incorporated.
  4. Layer Lasagna: Lightly spray the inside of your slow cooker insert with a non-stick cooking spray. Spread a thin, even layer of the meat sauce across the bottom of the slow cooker. Arrange three lasagna noodles over the sauce, breaking them as needed to fit the curved shape of your crockpot. Follow with another even layer of meat sauce, then spread approximately one-third of the cheese mixture over the sauce. Repeat this layering process two more times: noodles, meat sauce, then cheese mixture. Your final layer should be a spread of meat sauce over the top noodles.
  5. Final Cheese Topping: Evenly sprinkle the remaining 1 cup of shredded mozzarella cheese over the top layer of meat sauce. This will create a beautiful, bubbly, golden crust.
  6. Slow Cook: Cover the slow cooker with its lid and cook on the LOW setting for 3 to 4 hours. The lasagna is ready when the cheese is melted and bubbling, and the noodles are perfectly tender. Begin checking for doneness at the 3-hour mark. Be careful not to overcook, as this can make the noodles tough.
  7. Serve: Once cooked, remove the lid. Garnish the hot lasagna generously with freshly grated Parmesan cheese and chopped fresh parsley and basil. Let it rest for 10-15 minutes before slicing and serving warm to allow the layers to set.
