From Conference Inspiration to Kitchen Creation

I recently returned from an incredibly inspiring and fun-filled weekend in sunny Miami, where I attended the BlogHer Food conference alongside my wonderful friend, Jess from Stuck On Sweet. As it was our inaugural food blogging conference, we were buzzing with excitement, and it certainly lived up to expectations! We had an absolute blast, connecting with so many amazing people and soaking up a wealth of knowledge that promises to elevate our culinary journeys.

The adventure began with a breathtaking flight into Miami, offering a stunning panoramic view of the sunset painting the sky with fiery hues. It set a perfect tone for the warm, vibrant days ahead.

It’s common to dip pita bread, kibbeh, or even stuffed grape leaves into cool, tangy yogurt. Indeed, if you can name a dish, we’ve probably tried pairing it with yogurt!

This deep-rooted appreciation for yogurt naturally extends to my salad creations. Using yogurt as a base for dressings is a fantastic way to impart a creamy texture and tangy flavor while boosting the nutritional profile of your meal. You get the added benefits of extra calcium and probiotics, making your salad dressing both delicious and incredibly healthy. Ingredients

  • 1 cucumber, seeded and cubed
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese
  • 1 cup low fat yogurt
  • 2 Tablespoons extra virgin olive oil
  • 3 teaspoons dill, finely chopped
  • 1 clove garlic, minced
  • 1/2 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl combine cucumber, tomato, red onion, and feta cheese.
  2. In a medium mixing bowl, whisk together the yogurt, olive oil, fresh dill, minced garlic, lemon juice, and season with salt and pepper to taste.
  3. Pour the prepared yogurt dressing into the salad mixture and mix well to ensure all ingredients are coated. Taste and adjust seasonings as needed.
  4. Garnish with extra fresh dill before serving for an added touch of freshness.
